Ingredients
To prepare fritters you will need:
- Zucchini - three pieces.
- Three eggs.
- Cheese - about one hundred and sixty grams, preferably hard varieties.
- Wheat flour - half a glass.
- Sugar - one teaspoon.
- Three cloves of garlic.
- Dill - one bunch.
- Pepper and salt.
- Oil.
Cooking
Zucchini must be washed, peeled, remove the seeds (if they are already large and hard) and grate. To make the dough not too liquid, mashed zucchini should be salted, let stand for about 15 minutes, and then squeeze. So more excess fluid will come out of them. While they let the juice, grate the cheese. Add it to the already prepared zucchini. Pour the eggs there and mix vigorously.
Next, finely grind a bunch of dill and pour into the resulting mass. Grind the garlic and mix with the rest of the ingredients. The last thing left to do is salt to taste. In order to make the dough airy, flour should be poured in small portions, while stirring constantly. The dough for squash pancakes with cheese and garlic is ready.
Baking fritters
Pour a little oil into the pan and put it on the fire so that it warms up. The dough must be laid out in a pan portionwise using a tablespoon. Fry pancakes requires them on both sides until a golden color appears. Ready zucchini pancakes with cheese and garlic are placed on a plate with a paper towel to remove excess vegetable oil. - Starch - three tablespoons.
- Flour - from three to ten tablespoons.
- Sunflower oil.
- Spices, herbs.
Cooking process
My young zucchini, cut off the peel (if it has already become stiff) and rub on a coarse grater. Squeeze the juice out of them, as described in the previous recipe. Wash raw potatoes, peel and rub on a fine grater. Released juice must also be squeezed. We combine potatoes with zucchini. Grate hard cheese and add to vegetables.
Peel the onion and garlic, cut into small cubes. Fresh dill, shred and add to the rest of the ingredients. Now all this needs to be salt and pepper to taste. Next, add the eggs, mix well. In a separate bowl, mix the flour and starch. They are very carefully, constantly stirring with a spoon, add to the already prepared mixture. In order not to grease the pan with vegetable oil each time, pour it into the dough and mix again.
Getting to the baking. Put the dough on a heated frying pan with a large (tablespoon) spoon. Fry zucchini pancakes with cheese and garlic with the addition of potatoes over low heat until golden brown. After frying, the pancakes should be placed on a dense napkin or towel to get rid of excess oil. Zucchini pancakes with garlic, potatoes and cheese are ready. Serve them with sour cream, yogurt or sauce.
Oven pancakes

Wash young zucchini of a small size and rub on a fine grater, without peeling. They need to be put in cheesecloth and squeezed to remove excess juice. Remove the husks from the garlic and chop. Add it to the zucchini. We wash parsley and dill under running water, finely chop and combine with the rest of the mass. In the resulting mixture you need to drive an egg, salt and pepper to taste.
Cheese, as in previous recipes, needs to be grated and added to the rest of the ingredients. After this, add flour a little and mix everything well. The dough should be thick so that the pancakes retain their shape when baking.
