Alfredo is a pasta that has its own story. It was created several decades ago. The author of the dish is an Italian chef named Alfredo. Once his beloved wife fell ill. She lost her appetite. But the pasta, cooked in a gentle creamy sauce, brought the woman to life.
The cook was delighted with the recovery of his wife. He began to cook this dish in his restaurant. There was no end to customers. Alfredo later began adding chicken pieces and other ingredients to the paste. As a result, the dish became more satisfying. Now there are many variations of Alfredo pasta. Some of them are presented below.
Classic Alfredo Sauce
Essential Ingredients:
- Parmesan cheese - enough 80 g;
- salt - 1/3 tsp;
- 300 g of thick cream (fat content in the range from 20 to 30%);
- ground black pepper - on the tip of a knife;
- 20 gram slice of butter.
Cooking:
- Pour the cream in the right amount into a deep pan. Reduce the fire to a minimum. We are waiting for the moment when the cream begins to boil.
- Add oil to the same pan.
- Let's have cheese. The third part is left to sprinkle. The rest is cut into pieces and sent to cream and butter.
- Stir the ingredients in the pan. We got the sauce Alfredo for pasta. Pour pasta cooked with it. Mix thoroughly. Immediately serve the dish to the table, distributing it on the plates.
Alfredo Shrimp Pasta
Grocery set:
- Β½ tsp. black and red hot pepper;
- 350 g pasta fettuccine;
- one onion;
- 1 bunch of parsley;
- peeled shrimp (any, except tiger) - 750 g;
- fat cream - 2 glasses;
- 1 tsp dried basil;
- grated parmesan - 1 cup;
- 50 gram slice of butter;
- garlic - enough 4 cloves.
Practical part
- Peel and chop onion and garlic. Sent in a hot pan. Fry using oil. Sprinkle with red pepper. After 2 minutes, add the already peeled shrimp. Fry, turning from one side to the other.
- When the shrimp has a pleasant pink tint, add 350 ml of cream to them. We are waiting for the liquid to boil. Turn off the fire.
- In a pan with heated salted water, place the fettuccine paste. Cook for 8-10 minutes.
- When the pasta is cooked, pour into the bowl 300 ml of water in which it was boiled. We do not need the rest of the liquid. Drain it from the pan. We wash the pasta in cold water. Next we send to the pan where the dressing is located.
- Add the remaining 150 ml of cream. Cook the dish for another 10 minutes. Do not forget to stir.
- Sprinkle pasta with pepper and grated Parmesan. Mix. We notice 5 minutes. Decorate our dish with chopped basil and parsley. Fettuccine served on the table immediately after the cooking process.
Alfredo pasta with chicken
Grocery list:
- 2 tbsp. l wheat flour and refined oil;
- garlic - one clove is enough;
- 90 g of Parmesan and 3 tbsp. l curd cheese;
- medium fat milk - 1 cup;
- 1 tbsp. l butter and chopped parsley;
- chicken fillet - 2 pcs.;
- 1 tsp. lemon zest and spices;
- 350 g pasta fettuccine;
- pepper, salt to taste.

Step number 1. Where do we start? Boil the paste in salted water. This process will take 8-10 minutes. Pour water from the pan not into the sink, but into a separate container. She is still useful to us.
Step number 2. Chicken fillet cut into pieces. Place in a hot pan with butter. Fry for 5-7 minutes.
Step number 3. In a stewpan, melt a piece of oil. There we put the grated zest and chopped garlic. The frying time for these two ingredients is 20 seconds. Add the flour. Fry for another minute, stirring with a spatula. We introduce a glass of milk. This time we take a whisk in the hand. We will stir the dish with them. The next ingredient that goes to the stew-pan is curd cheese. Stir it until it dissolves in the sauce. Add 2/3 of the grated Parmesan. Stir again with a whisk.
Step No. 4. Pour the cooked Alfredo sauce. The paste should be hot. For a better βbunchβ of ingredients, add Β½ cup of water drained from the pan. That's not all. Put fried chicken into the pasta with sauce. Gently mix.
Step number 5. We shift our dish into a deep warm plate. Sprinkle with the remaining amount of grated Parmesan, chopped parsley or green basil. If desired, you can add pine nuts or peeled pumpkin seeds. But note: the calorie content of the dish will increase.
Mistresses note
- For pasta, we choose only pasta made from durum wheat. Otherwise, instead of a gourmet dish, you get porridge.
- Boil pasta to a state of al dente (until half ready). How to check it? If, when cracking, the pasta is solid, and the tooth feels resistance, then it's time to turn off the fire.
- After cooking, heat the pasta in a pan. Then you can add Alfredo sauce. The paste will not stick together. So, the dish will look more aesthetically pleasing.
