With chicken
This variation of the dish is considered more useful. Chicken stock, used as the basis for soup with rice, potatoes and meat, is a fairly budget case. What do we need for cooking:
- chicken - half a kilo (depending on the situation, you can use part leaner or fatter);
- potatoes - 2 pieces;
- one bulb of any diameter;
- rice - 100 grams of dry product;
- laurel leaf;
- medium carrots - optional;
- salt, spices - to taste;
- various greens - optional.
Stages of cooking chicken meat and broth
Before cooking, determine the part of the chicken that you intend to use in the recipe for soup with rice and the meat of this bird. Rinse the meat. Shake off excess moisture. Pour in the pan the required amount of cool water.
Now send the dishes with chicken to the stove. Cook until tender. Do not forget about adding a small bay leaf. Periodically remove the foam from the broth.
After forty minutes of moderate boiling, the chicken is ready. We take it out of the broth and cool it in a separate dish. It is better to strain the soup base through a sieve. But you can do otherwise and drain the upper part of the broth, leaving possible bumps at the bottom of the pan. We pour out the leftovers - we do not need them. Pure broth returned to the pan. We divide the poultry meat into pieces.
Vegetables for soup
My root vegetables of potatoes and carrots. We clean them. Rinse again in clean water. Potatoes cut into cubes. Carrots can be chopped as you like: bars, circles or just a coarse grater - all options will harmoniously fit into the overall composition and taste of the dish.

How to make rice and chicken soup

We put the pan with the broth on the stove and pour the potato wedges. Add salt according to personal preference.
We wash the rice several times until the water drained from it becomes transparent. We pour it to the boiling potato. We’ll send carrots and onions there.
Cook the soup at a moderate stove temperature for at least twenty minutes. During this time, the potatoes are cooked well enough. If the rice grains in your case remain a little hard inside - not scary. Rice will come on its own after completing the soup preparation process.
As soon as 20 minutes have passed, try the salt. Add more if necessary. Then pour out all the greens and, after mixing, carefully spread the pieces of meat.
Turn off the stove. We wait a minute, so that the temperature begins to drop, and cover the soup with a lid for 10 minutes.
Serve with sour cream or mayonnaise. Perhaps someone likes to feast on hot soup with rice and poultry, seasoning it with freshly ground pepper.
Pork or beef
In principle, almost any broth is suitable for soup. But in our case, let it be beef. The list of ingredients:
- meat on the bone - at least 500 grams;
- dry rice - 4 tablespoons with top;
- potatoes - 4-5 medium copies;
- carrots - 1 large;
- onions - 1-2 pieces;
- laurel leaf - 1-2 pieces;
- dessert spoon of ketchup - 1;
- salt and greens;
- vegetable oil - 1-3 tablespoons;
- water for the broth - 3 liters;
- other spices - optional.
Technological process
We carry out the necessary manipulations with meat: cut the tendons and rinse. Fill with three liters of water. Cook, as in the first recipe. But to cook beef, two or three hours from the moment of boiling are needed. The exact time depends on many nuances. In the process we remove the scale. We make ready broth, getting rid of small stones.
Separate the cooled meat from the bone and, cutting into suitable pieces, leave for a while.
My potatoes, carrots. After removing the peel, grind the root crops. Potatoes - as usual for soup. Carrots - on a coarse grater or in any other way. Prepare and chop the onions. Rinse the rice and remove water from it.
First, prepare a fry for soup with meat and rice. Pour lean, non-flavored oil onto the bottom of the pan. Fry the onions and carrots until golden brown (you can add a chopped celery stalk if desired) along with ketchup. We do it at a low temperature. Make sure the carrots are not burnt - stir the vegetables. It takes 10 minutes to roast.
In the finished broth, send a leaf of laurel, chopped potatoes and rice. We put the pan on the stove. Salt its contents to taste. Cook potatoes with rice for twenty minutes. The temperature of the plate during the process should be medium. Watch the condition of the soup: do not let it boil with a key.
Now put the contents of the pan into the bowels of the pan.
Remember the meat. It is also placed in a pan at the final stage of cooking. We are waiting for boiling again. Cook another dish for 5-6 minutes.
Washed and finely chopped greens must be poured into the finished soup just a minute before turning off the stove. You do not need to wait for boiling here - this will preserve more vitamins found in fresh herbs. We’ll cover the pot with meat soup and rice with a lid. Let the dish brew for a few minutes.
