Mushroom soup with rice is an excellent option for a summer first course. It is very simple to cook, it pleases with taste, even if cooked on water, and not on meat broth. This is a good option for vegetarians, because mushrooms are a great alternative to meat.
General rules
If you do not want to boil on water, you can cook the broth, having previously boiled a beef bone or a piece of chicken. The broth must be filtered.
Usually cooked mushroom soup with rice and potatoes. Other essential ingredients are onions, carrots, herbs, spices.
Fans of a special soup can mash it with a blender. Instead of rice, you can add other cereals, as well as small pasta.
The classic recipe for mushroom soup with rice
This soup can be prepared easily and quickly. It turns out incredibly tasty. You can use both water and pre-cooked chicken or meat broth.
What do you need:
- a handful of rice;
- 1 onion;
- 1 carrot;
- any mushrooms (chanterelles, ceps, champignons, etc.) - 300 g;
- potatoes - 3 pcs.;
- salt, pepper, bay leaf;
- greens;
- vegetable oil.
Process:
- Lightly boil or fry the mushrooms.
- Chop the onion finely, grate the carrots (coarsely) and fry everything in vegetable oil until golden brown.
- Throw rice into boiling broth (or water) and cook for about five minutes.
- Add sliced ββpotatoes and cook for 10 minutes, stirring occasionally.
- Put mushrooms in a pan, cook until potatoes are ready.
- At the end of cooking add onions with carrots, bay leaves, peppers, salt and herbs. Cook for about three minutes and turn off the heat.
- Ready mushroom soup with rice cover, let it brew, and then you can try.
With egg
What do you need:
- 2/3 cup rice;
- 2 eggs;
- 4 liters of chicken stock;
- 1 onion;
- 1 carrot;
- 300 g of porcini mushrooms (can be replaced with store mushrooms);
- 4 tomatoes;
- medium-sized potatoes - 4 pcs.;
- 2 tsp adjika;
- 1 bell pepper;
- bay leaf, salt;
- a pinch of saffron;
- ground black pepper;
- vegetable oil;
- greens (parsley, dill).
Process:
- Cut the potatoes into cubes (finely) and dip in boiling broth, add salt and bay leaf.
- In a pan, fry mushrooms chopped at random.
- Fry onions separately. When it becomes a little golden, add grated carrots, pepper. Fry all together for several minutes.
- Add adjika, tomatoes and seasoning to vegetables, simmer for two or three minutes.
- Transfer the prepared frying to soup, and after it drop the mushrooms and washed rice.
- Beat the eggs, pour them into the boiling soup gently, with a thin stream.
- Add chopped greens at the end of cooking.
- Let the soup stand for about 15 minutes, then you can offer it at home.
With wild rice and tomatoes
This mushroom soup with rice, exotic for our places, has a bright unusual taste. To cook it, you need wild black rice and Japanese forest mushrooms.
What do you need:
- 15 g shiitake mushrooms (dried);
- 85 g of rice (wild);
- 1 onion;
- 3 cloves of garlic;
- 1 can of tomatoes in own juice;
- 1 tsp dried tarragon;
- 15 g of ginger;
- two tablespoons of vegetable oil;
- a few peas of black pepper;
- salt.
Process:
- Rinse the rice, add water in a ratio of 1: 1, cook for about half an hour (it should turn out to be half ready).
- Rinse the mushrooms slightly, put them in hot water and boil for about 15 minutes.
- Cut the onion into small squares, crush the garlic and ginger in a special device.
- In a container in which mushroom soup with rice will be cooked, heat vegetable oil, send garlic, onions and ginger there, bring them to a transparent state.
- Cut each mushroom in half. Pour the water in which they were boiled (through a napkin) into a pot with future soup. Then put the mushrooms, tarragon and cook until boiling.
- As soon as it boils, add rice and 0.5 l of boiling water, bring to a boil.
- Put the tomatoes in their own juice in a saucepan, which must first be cut. Cover the soup and cook for about 30-35 minutes. Add salt and crushed peppercorns ten minutes before being cooked.

Thanks to Japanese mushrooms, the soup has a rich taste and aroma. He does not get worse the next day. If the mushroom soup with rice has become too thick, it can be diluted with water and boiled a little.
