Wild Duck Noodle Soup
The wild duck has always been a special delicacy. Especially good is the game in the soup with egg noodles. Duck meat is extremely beneficial due to its high content of vitamin B, iron, selenium and phosphorus. Also wild duck soup saturated with proteins, which is very useful for the category of people who are in nervous or physical exhaustion. The first dish of noodles is quite rich, hearty and mouth-watering.
Essential Ingredients:
- wild duck soup set - 0.8 kg;
- onion - 2 pieces;
- carrots - 2 pieces;
- celery stalk - 2 pieces;
- potatoes - 3 pieces;
- egg noodles - 5 tbsp. l
Practical part
To start cooking soup from wild duck, it is necessary to lower the plucked and gutted game into a pan, fill the container with water and bring to a boil. When the foam begins to appear, it must be removed and boiled duck over low heat for several minutes. After which the first broth should be drained.
Then the boiled duck must be transferred to a clean pan, add one onion (it should not be peeled, just wash it), bay leaf, peppercorns, spices and salt to taste. Pour water into a pan and boil the broth for an hour. After the allotted time, strain and salt again.
After that, you need to do vegetables. Peel the carrots, onions and celery, wash, cut into medium cubes and add to the cooked broth. Game meat must be separated from the bones, cut into pieces and also put in a pan. The resulting dish must be cooked for 10 minutes. Then cooked potatoes should be washed, peeled, chopped and added to the pan. Boil the contents for 5 minutes, toss the egg noodles, salt, boil until cooked and serve.
Game Noodle Soup
To prepare a delicious and hearty wild duck soup at home, you can use another recipe. It differs from the previous one in that it will require wheat flour, from which each housewife can independently make noodles.
To make such a soup you will need these products:
- wild duck carcass;
- potatoes - 2 pieces;
- onion - 1 piece;
- egg - 1 piece;
- flour - 3 cups.
If big game is available, before you start cooking the broth, you need to cut the duck into smaller pieces (but first pluck it and gut it). And only after that - put in the prepared container. Pour in water and cook on a slow fire. After boiling, the broth should boil for about half an hour.
From flour, chicken eggs and a pinch of salt, knead the dough. While the cooked batch is a little stand, you should start dressing the broth. To do this, washed potatoes need to be peeled, diced and added to boiling broth.
Now you should return to the deferred test. It must be rolled out and cut into thin strips. After 15 minutes, finely chopped onions (raw or pre-fried in a pan), as well as cooked noodles, can be thrown into the cooking broth.

Duck Soup with Rice
In addition to the above recipes for the first courses, you can also make soup from existing game, using rice cereal as a basis.
To do this, you need the following components:
- wild duck carcass;
- potatoes - 2 pieces;
- onion - 1 piece;
- carrots - 1 piece;
- rice - 70 g.
Wild duck must be plucked, gutted and divided into portions. Wash and peel the vegetables. Carrots should be grated with a grater, onions and potatoes - finely chopped into cubes.
Then it is worth starting to fry the wild bird. This must be done in a pre-heated pan. When a golden brown crust appears on the surface of the duck, it can be transferred to the prepared container, poured with water and cook over low heat. The broth should be salted and boiled for an hour.
Cooked onions and carrots should be fried. Then add the fried vegetables to the broth with potatoes and rice cereal, boiling all the components for 10 minutes. A liquid dish should be salted, pepper, and seasoned with bay leaf. Then boil for about 5-7 minutes.
The finished first course is usually poured on plates, sprinkling with finely chopped herbs.
