Chicken liver soup is a very satisfying and nutritious first course, for the preparation of which you do not need to purchase a large number of expensive components.
There are several recipes for such a meal. We will present only the simplest and most affordable.

There is nothing complicated in cooking this dish. Moreover, in order to make chicken liver soup as satisfying, tasty and nutritious as possible, there is no need to use hard-to-reach ingredients and spend a lot of free time on heat treatment.
On average, such a dinner takes about half an hour.
So how to make chicken liver soup? To do this, we need the following components:
- freshly frozen chicken liver - at least 300 g;
- large sweet onion - 1 head;
- medium potatoes - about 3 pcs.;
- large juicy carrot - 1 pc.;
- bay leaf - 2 leaves;
- buckwheat - ½ cup;
- fresh greens (parsley or dill) - use to taste and desire;
- salt and other spices - use at discretion.
We process products
Before you cook the chicken liver soup, you should process all the ingredients. The offal is thawed and then washed in cool water. After that, it is chopped with medium pieces and begin to process vegetables. Peel the onion, potatoes and carrots. The first two components are cut into cubes, and the last tinder on a grater.
As for buckwheat, it is sorted, laid out in a sieve and washed well in cold water.
Soup Cooking Process

It should be noted that such a dish turns out to be low-calorie, since there is practically no fat in it. Use it with a slice of bread and fresh sour cream.
Making delicious chicken liver soup with vermicelli
If you need to get not a diet dish, but a full, hearty dinner, then we suggest using the presented recipe. To implement it at home, we need the following set of products:

- small vermicelli - 3 large spoons;
- refined sunflower oil - about 35 ml;

We prepare the ingredients
To prepare the dish in question, the chicken liver is thawed, and then thoroughly washed, removing all unnecessary elements. After that, the offal is cut into small pieces and crushed in wheat flour.
After processing the liver, immediately begin to prepare vegetables. Carrots are rubbed on a grater, and potatoes and onions are chopped in cubes.
Frying ingredients
To make the most hearty and tasty soup, some products are recommended to be fried in a pan. A little oil is poured into it, it is warmed up strongly, and then the chicken liver, rolled in flour, is laid out. Frying offal to a golden state, it is placed on a plate and left aside. As for the pan, then add a little more oil (vegetable), and then spread the carrots and onions.
Vegetables are fried over medium heat until they are completely transparent. At the end, the dishes are removed from the stove and cooled.
How to cook a delicious dish?
Having fried some of the ingredients in oil, they begin to cook the soup. For this, drinking water is poured into a large pot and brought to a boil. Then, the previously fried chicken liver, cubes of potatoes, bay leaves and spices are alternately laid out in the dishes.
Cook the products for about 25 minutes, after which they add small vermicelli and fresh herbs. After mixing the ingredients, they are cooked for about 5 minutes, and then removed from the stove. Having added the steamed vegetables to the soup (carrots and onions), it is left under a tight-fitting lid for ¼ hours. During this time, the broth is saturated with the aromas of fried ingredients, it will become more delicious and rich.

After a short exposure of the soup under the lid, it is laid out on plates and immediately presented to the table. Seasoning the already aromatic broth with green onions, it is used together with a slice of bread.
It should be noted that the taste of the soup with fried chicken liver and sauteed vegetables differs markedly from what was presented above (recipe with buckwheat). Such a dish turns out to be much more caloric, aromatic and tastier.
How to cook liver soup for a child?
Chicken liver soup for a child is prepared as easily and simply as the two dishes above. However, to get a more healthy and easy to digest lunch, we recommend using a more complicated recipe. Strictly observing all its requirements, you can prepare a very tasty and nutritious soup puree, which your children will surely like.
So, to make mashed chicken soup, you need to prepare:
- freshly frozen chicken liver - at least 350 g;
- freshly frozen chicken hearts - about 150 g;
- large sweet onion - 1 head;
- medium potatoes - about 2 pcs.;
- large juicy carrots - 1 pc.;
- frozen broccoli - 150 g;
- whole milk - ½ cup per broth and 1 cup for soaking offal;
- sunflower oil - about 35 ml;
- frozen green peas - 180 g;
- fresh greens - use to taste and desire;
- salt and other spices - use at discretion.
Ingredient preparation
To prepare a children's dish, offal is thawed (liver and hearts), thoroughly washed and all undesirable elements are removed. Then they are chopped with medium slices, laid out in a bowl and poured with fresh milk. This is necessary in order for the liver to lose its inherent bitterness, become soft and as tender as possible.
While the offal is steeped in milk, begin to process vegetables. Chop the carrots and potatoes in large cubes, and the bulbs in thick half rings.
As for broccoli and green peas, they are used in ice cream form.
Cooking products
Boil chicken hearts and liver soup in a large saucepan. It is filled with water and boiled. Then spread the liver and hearts into the dishes, and also add a little milk and spices.
Cook these products until completely soft. This can take you about 35 minutes.
After the offal is cooked, they are taken out and cooled. As for the broth, potatoes and carrots are laid out in it. After boiling vegetables, ice cream broccoli and green peas are added to them. After boiling the ingredients for about 7 minutes, they are removed from the plate and slightly cooled. After that, dip the blender into the broth with vegetables and beat it until a smoothie soup is obtained. In the future, it is again boiled, after adding fresh chopped greens.
Roasting ingredients
To make the soup puree as tasty and aromatic as possible, cooked liver and chicken hearts are fried in a pan. To do this, pour a little oil into the stewpan and warm it up a lot. Then put onion half rings in it and fry them until they are rosy. After that, the liver and chicken hearts are added to them. After mixing the components, they are salted and pepper to taste. When the ingredients are browned, they are immediately removed from the stove.
Serve the soup puree to the dining table
Having prepared a thick vegetable broth, it is poured into small plates. Also, previously fried chicken hearts, liver and half onion rings are added to the soup. If you want, then the dish can be doused with a small amount of sunflower oil, in which offal was prepared.
