Almost every one of us remembers how delicious grandma's pancakes were. - millet (0.5 standard glass);
- semolina (1 glass);
- 2 chicken eggs;
- milk (3.5 cups);
- water (half a liter);
- odorless vegetable oil (1 tbsp. l.);
- soda (baking powder) (0.5 tsp);
- dry yeast (8 grams);
- salt (1 tsp);
- sugar (1 tsp, but more can be).
Cooking
Millet should be soaked and washed well so that there is no bitterness. Boil in water until cooked.
Pour one and a half cups of warmed milk into semolina, drive in 1 egg, add salt, granulated sugar and vegetable oil. After mixing, combine with kulesh (boiled millet).
In half a glass of warmed milk, dilute the yeast, pour into a kulesh, mix. Gradually introduce flour (sifted), knead the dough. The consistency will be average, something between the dough for pies and muffins.
Next, you need to let the dough rise well in the heat, you can use an oven preheated to 60 degrees for this purpose. After the dough increases in size by two, or even three times, add the remaining milk, egg and baking powder (if baking soda, then quench with vinegar), mix well.
Fry pancakes, baking well on each side. Each pancake must be lubricated with butter!
Classic pancakes
We offer a recipe for delicious grandmother’s pancakes that every housewife can cook, even if she had never baked pancakes before . It is worth noting that the ingredients are prescribed for a large number of people, so that 6-7 people can eat plenty. If necessary, reduce the proportions by half:
- chicken eggs (6 pieces);
- one and a half liters of warmed milk;
- sugar (2 tbsp. l.);
- salt (2 tsp);
- flavourless vegetable oil (4 tbsp. l.);
- soda / baking powder (1 tsp);
- sifted flour (14 tbsp. l. with small slides).
To make the dough, mix all the dry ingredients with eggs, add a little sifted flour to make a thick dough. Pour a little milk, mix, re-introduce the flour, then milk again. And so on until all the components are in the same bowl. Mix the dough well each time. Such a sequence will help to avoid the appearance of lumps, which in the batter are almost impossible to break. Lastly, add the odorless vegetable oil, mix again.
On a hot, greased with a small amount of oil pan, pour the mixture in portions, distribute on the entire surface. When the edges are fried, we separate them from the pan with a thin knife and turn the pancake on the second side with a spatula. So do with everyone. Classic grandma’s pancakes are ready. The recipe is insanely simple, and the taste of the cooked goodies will delight every member of the family and guests. If desired, such pancakes can be stuffed with cottage cheese or minced meat.
Yeast Pancakes: Grandma's Recipe
Pancakes prepared in this way are very delicate in taste, and their appearance resembles lace napkins that our grandmothers loved and laid on tables, TVs, etc. Will we try to make an edible "napkin"?
We will need:
- egg (1 pc.);
- warmed milk (half a liter);
- sifted flour (0.5 kilograms);
- granular yeast (15 grams);
- sugar (1 tbsp. l.);
- salt (1 tsp);
- water (glass);
- flavourless vegetable oil (3 tbsp. l.).
From granulated yeast, you need to make a dough. To do this, take a full glass of heated water and dilute the yeast in it. Mix with 250 grams of flour, cover with a paper towel and stand for an hour.
Add salt, sugar, yolk, oil to the dough. Pour the remaining flour, mix. Pour warmed milk into a thick dough, mix well and stand. The test needs to be raised 3 times, and each time it needs to be lowered.
Pancakes can only be baked in a hot pan.
Thick porous pancakes
There are different types and consistencies of grandmother's pancakes. The recipe for thick and satisfying pancakes will appeal to all housewives, since it does not take a lot of time to cook them, and they turn out to be quite satisfying. Such pancakes can be served for breakfast and dinner. Perfectly combined with sour cream.
Products:
- granular yeast (a teaspoon with a good slide);
- egg (3 pieces);
- milk (0.8 liters);
- sugar (1.5 tbsp. l.);
- salt (1 tsp);
- real butter (50 grams).
The flour must be sifted, mixed with salt, granulated sugar and yeast. Heat the milk (not to boiling water, up to about 30 degrees), pour a fine stream into the flour mixture. Mix thoroughly, cover with a napkin and let rise.
Add melted butter and beaten eggs to the finished dough, mix, and then bake in a hot and greased frying pan.
Grandma's thin pancakes in milk: recipe
In order to cook such pancakes, you can use fresh milk, and a little sour. In any case, surprisingly thin pancakes will turn out. Grandma’s recipe involves the use of such ingredients:
- warm milk (400 ml);
- water (250 ml);
- flour (2.5 standard glasses);
- egg (4 pieces);
- sugar (2 tbsp. l., more or less is possible);
- salt (1 tsp);
- sunflower oil (4-5 tbsp. l.).
Mix a glass of flour with granulated sugar and salt, pour in the warmed milk, stir. Add whipped eggs, leftover flour. Heat the water to 60 degrees, pour a thin stream into the dough. The last thing to add is vegetable oil.
Pour the dough into the pan in small portions, distribute it well over the entire surface.
Thin crepes with cream
This is a very tasty and surprisingly tender dish. Pancakes have a pleasant creamy taste, especially like children with strawberry jam or stuffed with fresh strawberries. What will be needed for cooking?
Products:
- milk (4 standard glasses);
- flour (2 standard glasses);
- cream (1/2 cup);
- egg (2 pcs.);
- real butter (5 tbsp. l.);
- odorless vegetable oil (5 tbsp. l.);
- salt (1 tsp);
- sugar (3-4 tbsp. l.).
2 cups of milk are mixed with eggs, sugar, salt, preferably whisk with a whisk. Add flour to the resulting mixture, mix, pour in the remaining milk, cream, sunflower oil and melted butter. The test needs to be infused for an hour, after which thin pancakes can be baked from it.
Grandma's Tricks
In order to bake more pancakes and please our grandchildren with a treat more quickly, our grandmothers used two pans at once.
To make thin, with many holes grandmother’s pancakes, the recipe involves adding a few tablespoons of boiling water to the finished pancake dough.
Get rid of lumps and oxygen bubbles will help half an hour of standing ready dough.
The pan is greased with butter only for frying the first pancake, the rest will have enough oil added to the dough.
It is advisable to use a real cast-iron pan, and not with a non-stick coating.
