It turns out that sauerkraut soup can be seen not only on the tables of Russians. Belarusians, Ukrainians, Lithuanians, Romanians and Poles also consider it their national dish. Of course, each of the above peoples has its own characteristics and secrets of preparing this wonderful dish.
But we will talk about how to cook cabbage soup in Russia. Fresh, pickled and cauliflower can be used for this . In this article, we will cover all three recipes.
To make soup with sauerkraut, you must:
1) Prepare the vegetables and finely chop them.
2) Any soup is based on broth. So, we cook the broth, and about half an hour before the readiness we put vegetables in it. In a pan, fry finely chopped onions and carrots, grated on a coarse grater.
3) We take out sauerkraut from the can, thoroughly rinse and squeeze. Then add it to the carrots and onions, which were fried in a pan.
4) While the vegetables are boiled, you need to quickly peel and grate the beets, and cut the potatoes into small cubes.
5) Put the potatoes in a boiling broth, and simmer the other vegetables over low heat, tightly closing the lid. When the beets are ready, it must also be sent to the broth. In the soup with sauerkraut, add ground pepper and salt. It remains to bring everything to a boil and remove from heat. It is advisable to give borscht for several minutes to sweat under the lid.
Soup with sauerkraut is served with sour cream of medium fat content and cloves of garlic.
The second recipe we offer is soup with fresh cabbage. To prepare it, you need to take medium carrots, 400 g of fresh cabbage, dried herbs, 4 potatoes, canned mushrooms, bay leaf and spices.
We start by chopping cabbage finely. After that we take carrots, potatoes and cut them into small cubes. We mix these vegetables well with each other, and then add the mushrooms and selected spices. All this is laid out in a double boiler and cooked for 30-40 minutes. In a conventional pan, this process will be longer. When the vegetables are ready, you need to carefully turn the bowl of vegetables into the lower tier of the double boiler, where the broth is. We put a bay leaf there and wait 10 minutes for it to sweat under the lid.
No less tasty and healthy dish is a vegetable soup with cauliflower. He has many recipes and variations. But we decided to opt for a light and nutritious soup intended for a children's diet. It contains various trace elements and vitamins. To prepare this dish, you will need the following products: 4 potatoes, onions, medium carrots, 300 g of cauliflower, tomato, dill and 2 l of vegetable broth.
Add boiled potatoes into small broth on the stove. Cook for 10 minutes. During this time, you must cut the tomatoes and onions into cubes, and also grate the carrots. We take cauliflower and begin to disassemble it into inflorescences. Add the remaining vegetables to the potato (tomatoes last). Cook for another 7 minutes, add finely chopped dill and salt.
