Rice soup with beef is a quick dish to cook, while it is hearty and tasty, although not very familiar to Russians. By tradition, it is customary to cook soups with potatoes, but you can do without it. Below are three recipes for rice beef soup with a photo.

Without potato

This simple and easy dish may well be considered dietary.

What do you need:

  • 400 g of beef without fat;
  • 2.5 liters of water;
  • 60 g round rice;
  • 1 onion;
  • 1 bay leaf;
  • 1 carrot;
  • 5 peas of allspice;
  • 3 tablespoons of odorless vegetable oil;
  • a bunch of dill;
  • a pinch of salt and ground pepper.

Process:

  1. Rinse the beef lightly and cut into small pieces.
  2. Put the meat in a pan, pour water, toss allspice, salt, bay leaf. Put on fire when it boils, reduce flame and simmer for 1.5 hours on low heat, constantly removing foam.
  3. Heat the oil in a pan.
  4. Chop the onion with a knife, cut the carrots into circles, fry in oil until the onion becomes golden.
  5. Throw rice into the prepared broth, cook for about 7 minutes.
  6. Put the frying in a pan, add chopped dill, after boiling, cook for another two minutes.

It remains to put ground pepper and salt in rice soup with beef.

With potatoes

Potatoes, tomato paste (tomatoes) are added to this soup.

What do you need:

  • 0.5 kg beef (veal) tenderloin;
  • 3 l of water;
  • half a glass of rice;
  • 4 pieces of potatoes;
  • 1 carrot;
  • 2 onions;
  • hops-suneli;
  • celery;
  • tomato paste;
  • Bay leaf;
  • salt.

Cooking method:

  1. Rinse the meat slightly, dry it, cut into strips or small cubes.
  2. Pour water into the pan, put on the stove. When it starts to boil, put the meat.
  3. Peel the onion and dip it whole in the pan. Then add the celery root and half the carrots.
  4. Boil the broth for about 40 minutes on low heat, constantly removing foam.
  5. Rinse rice under tap water.
  6. Peel and slice the potatoes.
  7. After 40 minutes, remove vegetables and roots and lay rice and potatoes. Cook for about 20 minutes.
  8. Cut the second onion into small cubes, grate the half of the carrots on a coarse grater. Sauté in vegetable oil in a skillet over low heat for about 10 minutes. Stir, add tomato paste, mix again and simmer for five minutes under the lid. If there is a desire - put sweet pepper in the frying, it must be cut and fried along with onions and carrots. Instead of tomato paste, you can put fresh peeled tomatoes, but you do not need to stew them, but simply put them in the soup along with the sauté.
  9. 5 minutes before the soup is ready, send roasting, suneli hops and salt to the pan.

Put bay leaf in the prepared soup, cover and let stand for 5-7 minutes. Now you can pour on plates and treat homemade.

In Chinese

The following ingredients are needed for this recipe for beef rice soup:

  • 300 g beef tenderloin;
  • 20 ml of rice wine (can be replaced with sherry);
  • 10 g of corn starch;
  • 180 g short grain rice;
  • 8 glasses of water;
  • 20 ml of soy sauce;
  • 1 head of lettuce;
  • 4 feathers of green onions;
  • salt;
  • ground red and black pepper.

  1. Cook marinade by combining rice wine, soy sauce and starch.
  2. Cut the beef tenderloin into thin slices across the fibers, place in the marinade, mix and leave for half an hour.
  3. Rinse rice to clear water, put in a pan, pour cold water (8 cups), put on high heat and bring to a boil. Reduce heat, cook for 20 minutes, do not cover.
  4. Cut lettuce with ribbons about 1 cm wide, green onions in small pieces - 1 cm long.
  5. Put the meat and marinade in a pan, then send the onion there, wait until it boils, remove the rice soup with beef from the stove and put lettuce and salt in it.

It is recommended to pour it immediately and add ground pepper directly to the plates.
