Mushroom soup ... Probably each of us loves him, right? The recipe for this dish came to us from Sweden itself. It is in this country that mushroom cream soup is the number one dish in terms of popularity and usability. This soup in Sweden, like french fries or hamburgers in America, that is, a dish reflecting nationality. Mushroom cream puree soup has become famous thanks to the Ikea restaurant chain.
It is advisable to use butter for frying - at least in Sweden they use it. If you follow the classic recipe and traditions. However, this is not important: some replace the cream with olive oil. This does not significantly affect the overall taste of mashed soup.
To prepare mushroom cream soup, you need the following set of products: mushrooms (any) - 450 grams, onions - 1 piece (large onions), water - 500 milliliters, soy sauce - 3 tablespoons, butter, parsley, cream - 300 grams, salt and pepper to taste.
Cream of mushroom cream soup is surprisingly easy to make. First you need to select the five most beautiful mushrooms and set them aside. Why - say later. Those mushrooms that are not included in this five are finely chopped. We also cut the onion finely, rings are not an option. Fry onions and mushrooms in butter until a golden hue appears.
Then pour the contents of the pan into the pan, add water there. Pour in soy sauce, cream. Cook the mixture for 15 minutes, stirring vigorously. Here we have mushroom soup. However, we need to make mushroom cream soup with cream. To do this, pour the soup into a blender and grind to a puree mass. After that, add salt and pepper to taste.
Those mushrooms that we set aside (5 pieces) are cut into slices. They need to be fried in oil (preferably also creamy). We add these ready-made mushrooms to our creamy mushroom soup puree. You can decorate the dish with parsley, if you wish.
By the way, some add caraway seeds there. However, this type of ferry is quite specific, therefore it is designed for the amateur. If you have nothing against caraway seeds, you can add. This will give a new flavor to your mushroom soup.
You can cook this dish without cream. Then it will be mushroom soup with sour cream, a more familiar option for us. As a rule, mushrooms such as champignons or ceps are used in this case.
The recipe is as follows: 600 grams of mushrooms, 1 carrot, 1 onion, parsley, broth, 2 tablespoons of flour, 2 cups of hot milk. Small hats, specially selected from the total mushroom mass, are fried in butter. They will serve as a further decoration of our dish. Grind the prepared champignons in a blender, put them in a pan, put the butter in the same place - 1 tablespoon, cut the carrots along, and send both parts to the pan. Do not cut the onion, add to the whole soup. Same thing with parsley root. Cover the resulting mixture with a lid. Stew the dish on the fire for about 25 minutes. Then we fish out the onions and carrots from the castrble.
Fry 2 tablespoons of butter and 2 tablespoons of flour until this mixture turns light brown. Then we dilute the resulting consistency with milk or broth. Boil. Add chopped champignons there. Dress with sour cream, decorate with hats. This dish is served with croutons.
By the way, mushroom soup puree is not the only option for mashed dishes. There are others as well. For example, beetroot soup. This beetroot dish is cooked for no more than 15 minutes. And not inferior to mushroom puree in its original taste. True, it came to us not from Swedish cuisine. To prepare it, you will need beets, butter, onions and vegetable broth. Grind all the ingredients in a blender, mix it all together, stew for 10 minutes in broth, salt, add sour cream. Everything - the dish is ready!
