Cooking soup with meat implies the presence of a base - broth. This strong fat is beautiful in itself, with only one “but”: if you welded it correctly. Believe me, no one will eat a muddy liquid with an unpleasant odor, and it will be problematic to make a tasty soup out of it.
So, the basis of the basics is cooking the broth. To do this, you will need to send a piece of meat, root vegetables into cold water and cook everything over low heat for at least two hours. There can be any meat (chicken, pork, beef or lamb), but it is better to take a piece on the bone. From the roots, it is preferable to take onions, celery root and carrots. Vegetables are thrown out at the end of cooking. When the broth boils, remove the foam, throw a bunch of greens into it (at the end of cooking it is also thrown out), peppercorns and
bay leaf. Finished meat is removed from the broth, separated from the bone. Filter the broth and return the meat pieces to it (so they will remain tender and juicy).
You can ignore this lengthy process by simply boiling the portioned portions for half an hour, but ... Take the time, cook just such a broth as we advise you. It can be stored in the refrigerator for several days. You will cook fresh soup each time, different each time, using the broth in parts, and not all at once.
Meat soup
This is the simplest option we have proposed. It is best to cook it on freshly cooked, not yet cooled broth. All that is required of you is to chop a lot of green onions, parsley, dill. Put a large handful of chopped mixture in a serving plate and pour boiling broth. Serve with boiled meat and fresh bread.
Meat and Noodle Soup
For it, you will need to boil the noodles in water until half ready. Put almost cooked noodles into a well-heated broth with meat and let it brew. Serve with herbs.
Soup with meat and rice
Chopped potatoes and carrots are placed in cold water. There should be very little water. So the vegetables cook faster, and there will be room for a good broth. When it boils, add a handful of rice and let it boil for ten minutes. Then add the broth to the volumes you need and put the fried onions in it. Salt and spices at your discretion. Serve with greens and boiled meat.
Soup with meat and buckwheat
For this soup, you will need to do the same as in the previous recipe, only replacing the buckwheat rice.
Meat Soup Recipe
A potato, especially if it is of a good grade, can decorate any soup. For this first-course recipe, you will need freshly cooked friable potato, which must be combined with fried onions, carrots and celery root. Puree, add warmed broth, stir everything to the required consistency. Salt, pepper. Serve with boiled meat and croutons.
Soup with meat. Solyanka
Fry chopped onion and carrot until soft. Then add finely chopped pickled cucumbers and a couple of spoons of tomato puree, cut into strips of meat (at least three varieties are used in this recipe, at least one must be smoked). Warm up on fire. Add broth to the required consistency. Salt, pepper, add sugar. Allow to boil, turn off and leave to insist briefly. Serve with olives and lemon slices.
