In Russia, bread kvass was drunk both in the tsar's chambers and in the huts of ordinary peasants, and during fasting kvass, along with black bread and onions, was the main source of vitamins. Homemade bread kvass: recipe without yeast
In a 0.5-liter jar, pour a glass of boiled cooled water, grind 0.5 fractions of rye bread and add a spoon (teaspoon) of sugar. We cover the sourdough in the jar with a cloth and leave the kvass in a warm place. Fermentation without yeast occurs a day or two. In a day or two we try the leaven, it should be muddy and with a sharp taste. Pour the sourdough into a 2-liter jar, add two slices of crushed bread, a tablespoon of sugar and fill the jar with chilled boiled water. Close the lid and let stand for a day. After a day or two, we taste our kvass, pour 2/3 of the liquid into a separate bowl. Add the remaining sourdough with slightly warm boiled water, add chopped bread, close and insist again.
