The ingredients you will need are: first, take in the amount of 200-300 grams your favorite cheese (of course, processed). Cheese soup is prepared on a broth that needs to be cooked in advance. In the evening, boil chicken, and preferably chicken, so that the broth is rich, strong, but not fat. Although, you can cook it all at once. We go further: butter - 3 tablespoons; 1 egg yolk (finely chop it); 3 cloves of garlic (also chopped); celery - a few stems (cut into small pieces); 2-3 medium-sized carrots (cut into cubes or small strips); 500-600 ml of broth; several potatoes (diced); a glass of milk, 4 tablespoons of flour, chicken, diced, like a salad.
The cooking process itself:
- In a saucepan, in butter, pass the carrots, garlic, onions and celery for 5-6 minutes to make the onions transparent. After this, pour in the broth, put the potatoes, wait for it to boil, and cook for 10-15 minutes.
- Stir the flour in the milk, pour into the soup, stir and cook for a few more minutes. The soup will begin to thicken - do not forget to interfere, otherwise it will burn.
- It's the turn of cheese. Soften it, for example, in a microwave or in a water bath. And enter into the soup, stirring all the time so that no lumps appear.
- Beat the soup into a homogeneous mass with a blender. Put chicken, add salt and pepper to taste.
- The soup is ready. Pour it on warm plates.
