Lenten menu can be no less varied than the usual. And, of course, lean dishes can delight you with a delicate and refined, or spicy and tart taste. An example of excellent taste and a huge variety of sweaty dishes can be lean soups.

Tasty lean soup is not as rare as it may seem to an ignorant person. And you can cook it from almost any vegetable, and not just vegetables. For example, soup-puree "Mushroom clearing." This soup is prepared from fresh champignons (they need about 400 g), several large potatoes, large carrots, onions, herbs and spices. Most of the mushrooms should be finely chopped, however, literally a few pieces need to be left whole, they will come in handy to decorate the finished dish. Peel the potato, finely chop it, put it together with the mushrooms in a pan and fill it with water. Then it is put on fire and the water in it is brought to a boil, salted.

While the water is heating, you need to chop the carrots, put it in a frying pan and fry in vegetable oil. It is necessary to fry and pre-chopped onions. Both are thrown into boiling water, salt and favorite spices are added. When the potatoes are ready, part of the broth is drained from the pan, and the rest is poured into a blender and crushed to a puree state. If the soup is too thick, it is bred with the drained broth. Mushrooms, which were laid aside at the very beginning of cooking, need to be cut into plastics and fry in oil until a pleasant, golden color. Soup is poured into plates before serving and carefully spread the fried mushrooms on top and sprinkled with herbs.

Mushroom-based lean mushroom soups are the most common. That is why it makes sense to bring another recipe for mushroom soup. This time, it will be based on ceps, 300 g. You need to cut them with plastic, not too thin. Sliced ​​mushrooms must be put in water and brought to a boil. Then the mushrooms are removed from the broth and fried in a pan with grated garlic and a small amount of flour. Then the fried mushrooms are transferred back to the broth and boiled again, salt and spices are added, then they are cooled and ground in a blender.

But mushrooms are not the only thing that lean mashed soups are made of. Quite often, the basis for such soups becomes a variety of cabbage. Here, for example, is one of the cabbage recipes. For this dish you will need 200 g of broccoli, cauliflower and white cabbage, one bell pepper, tomato, onion, as well as a can of red canned beans.

All vegetables are chopped and boiled for 20 minutes, then the whole contents of the jar with beans are laid out to them, salted and boiled for about 5 minutes. It remains only to grind it all in a blender, and the soup is ready.

Another great mashed soup is boiled in peas. Peas for this recipe need about a glass. It needs to be soaked in cold water for five hours, maybe at night. The eighth of the celery root and half of the parsley root are peeled and cut into strips.

The soaked peas add the roots of celery and parsley and put on fire. When the water boils, the power is reduced to a minimum and left to cook until cooked, on average about 1.5 hours.

While peas are being cooked, it is necessary to peel and chop onions and carrots and fry them in a pan. When the peas are ready, add the fried onions and carrots to it, mix and leave to cook for another 5 minutes. The resulting mass in a blender is brought to a puree condition, poured again into a saucepan and again brought to a boil, after which the soup can only be cooled and you can serve.

Finally, the recipe for pumpkin soup puree. 800 g of pumpkin, 300 g of carrots and 2 onions cut into medium-sized pieces. Slices of garlic are cut into two to three parts. All vegetables are fried in sunflower oil for 5-7 minutes. Then vegetables are poured with a liter of water. Grated fresh ginger, a root about 5 cm long and salt are added there. The pan is placed on the stove and the soup is cooked for about 15 minutes. Then the vegetables are ground in a blender and 100 ml of 20% cream is added to the soup.
