  • 0.5 l of strong meat broth;
  • 50 g of cow's butter;
  • one carrot;
  • one leek (lower zone);
  • two chicken yolks;
  • 50 g of parsley (fresh);
  • 200 ml cream (not too greasy);
  • two parsley roots or a half of celery root;
  • salt and spices you like.

How to cook

Cook this beef liver puree soup like this:

  1. Wash the liver, clean from the vascular veins and the remaining films, soak in milk, cut into tiny pieces.
  2. Parsley roots, leeks and carrots finely chop.
  3. Put vegetables and beef liver in a deep skillet, add spices and salt, fill with broth and simmer until tender over low heat.
  4. Puree the finished liver and vegetable mass with a submersible blender to a uniform and smooth consistency.
  5. Pour into a saucepan and put on low heat.
  6. Melt the cow butter in the freed pan, fry all the wheat flour on it until golden brown. Then pour the cream, stir and after 5 minutes, also add to the pan.

  2. Put the prepared liver in a pan, send the salt, spices and chopped carrots there.
  3. Fill everything with a small amount of broth and simmer until tender, periodically removing the foam.
  4. Boil separately rice.
  5. Melt the butter and pass the finely chopped onion on it.
  6. When the carrots and liver are ready, send the fried onions, boiled rice and the remaining chicken stock to the saucepan with the soup.

  • three onions;
  • salt and spices (to taste);
  • hard cheese (optional).

Cooking process:

  1. Wash and clean the greens. Pour beef and chicken liver with a small amount of broth and simmer until tender, adding salt and spices. When cooking, remove the foam so that it does not settle in the broth in the form of flakes.
  2. Melt the butter in a pan and fry the onion in it until golden. Remove it with a slotted spoon, leaving oil in the pan.
  3. Separate the finished offal. Fill the chicken liver with the remaining part of the broth and grind it with a blender along with the onion, previously fried.
  4. Pass the beef liver a couple of times through a meat grinder and send to the pan.

  • 180 g broccoli or cauliflower;
  • salt;
  • six branches of thyme (optional);
  • freshly ground pepper;
  • 2 tbsp. l vegetable oil.

  1. Wash the zucchini and cut into cubes (if the vegetable is not young, cut the skin).
  2. Peel the onion and cut into half rings.
  3. Wash the carrots, peel and chop with a coarse grater.
