Yemenis prepared coffee for use by the dry method, that is, they dried grain in the sun. And only then the goods fell into the hands of visiting merchants - since the secrets of the growth and preparation of grains were kept in the strictest confidence. No foreigner was allowed to visit coffee plantations. The authorities also strictly monitored that not a single grain of the drink fell into the hands of foreigners before processing. But one Muslim wanderer, Baba Budan, managed to take out several Mocha coffee beans from the country. Coffee has ceased to be the prerogative of Yemen. The name Baba Budana is “left over the centuries” for coffee magnates in India and Holland. These grains were transported by a pilgrim to Chikmagalhur (South India), where they gave rise to coffee planting, production and export of Mocha coffee by this country.

A few decades later, Dutch businessmen exported coffee beans from India and established their plantations on the islands of Sumatra and Java. Thanks to the advertising, transport and marketing services of the East India Company, a few years later Holland was known as the world's leading supplier of Mocha. From this moment, the general economic level in Yemen has fallen, but coffee is still being grown there, although it is appreciated all over the world for its exclusive qualities. The taste of this drink is very diverse and directly depends on the location of the plantation on which the plant grows. It happens: floral, mushroom, fruit, nut, cheese and caramel, but always with a velvety intonation of chocolate.

In addition to designating a variety of coffee, “Mocha ” is also called one of the ways to prepare this drink, which can rightly be called a hot cocktail.

Classic Mocha coffee recipe

Mocha Cake
Ingredients: 7 g of ground coffee, 100 ml of water, 50 g of chocolate, 50 ml of milk, 50 g of whipped cream.

An espresso is prepared in a coffee machine, chocolate is melted in a hot bath, cream is whipped in a blender into steaming foam, milk is slightly warmed up. Next: chocolate is poured onto the bottom of a heat-resistant glass, on top of which milk is poured carefully over a bar spoon, using the same spoon, the prepared "espresso" is poured. Layers should not mix. At the end, or the so-called “hat”, put whipped cream in a glass , which is sprinkled with fine chocolate chips.

On the basis of a hot Mocha coffee cocktail, confectioners came up with a Mocha cake, a cream in which the taste and ingredients are similar to a drink. These recipes are inspired by Yemeni coffee, which has an unforgettable chocolate palette of flavors.
