Seafood has been very popular lately. The unusual appearance, unique taste of these unique products, as well as a host of useful properties push culinary experts from all over the world to create new recipes. A special niche in this huge list is occupied by soups. Take, for example, creamy shrimp soup.
Seafood and dairy products
The inhabitants of the deep sea began to appear quite often on our tables. And not only on holidays. Almost everything is prepared from them: appetizers, salads, desserts, dough products and, of course, soups. The most common seafood that can be found on the shelves of our stores is shrimp. They are usually sold in the form of freshly frozen or cooked-frozen semi-finished products. Once in the soup, these small crustaceans are able to change its taste beyond recognition. And if you add some dairy product (cream or cheese) as an additional component, then the taste index and nutritional value of such a dish will increase significantly. Itโs not difficult to cook, for example, creamy shrimp soup . To do this, you must have 400-500 grams of peeled shrimp, 300 grams of cream cheese, 3 potatoes, salt, 1 onion, pepper, 1 carrot, bay leaf and herbs (parsley, dill and green onion). As a liquid component, you can use 600 milliliters of chicken broth or plain water.
Cooking soup is surprisingly simple:
- First you need to chop all the vegetables. This can be done arbitrarily (as you like). Grind greens more carefully.
- Cook the broth or boil water.
- In a boiling broth (or water), dip the pieces of cheese. Stirring with a spoon (or whisk), wait until they completely dissolve.
- Pour vegetables, salt, pepper into a saucepan, put bay leaf and cook for 15 minutes over medium heat until the potatoes are ready.
- Add the shrimp and continue to cook until it has a delicate pink tint. It will take 3-4 minutes.
Now the finished soup can be safely poured into plates and sprinkled with plenty of herbs.
Rainbow of taste
If you slightly change the composition of the starting components, then the creamy soup with shrimp will become even tastier. The set of products should be approximately as follows: for 1 kilogram of king prawns, you need to take 400 grams of frozen corn, 4 potatoes, 1 onion, 2 liters of broth (chicken or fish), a glass of 20% cream, 2 cloves of garlic, 1/3 tablespoon of starch, 10 grams of salt, ground black pepper, a bunch of fresh cilantro and a teaspoon of dried thyme.
A creamy shrimp soup is made like this:
- Shrimp should first be thawed and freed from the shell.
- Dip the chopped vegetables in a pan with hot water and boil.
- Add salt, thyme, chopped garlic, corn, pepper and bring to a boil again.
- Throw shrimp into the boiling mixture.
- Dilute starch in cream and slowly pour the resulting mass into the soup.
- Then add the remaining ingredients and wait until the mass boils โin the keyโ. After this, the soup should stand for about 10 minutes. And only then can it be safely served on the table.
Holiday of fragrant spices
You do not need a pan to make soup. With the same success, it can be done in a pan. And if you add more different vegetables and spices, then this will only benefit the soup. You can take any seafood, not just shrimp. Mussels, squids, scallops and, of course, fish are perfect here. If desired, you can use the "sea cocktail", which is a mixture of all of the above. A very interesting creamy soup can be obtained if it contains the following products:
- 450 grams of a mixture of seafood;
- 4 tomatoes;
- 3 onions;
- a tablespoon of tomato paste;
- 3 cloves of garlic;
- salt;
- 70 g of vegetable oil;
- a glass of cream;
- ground black pepper and a lot of greens.
Prepare the soup as follows:
- In a deep frying pan, heat the vegetable oil and fry the onion, chopped into cubes and chopped garlic in it.
- Put frozen seafood in a pan, cover and leave to warm for 10-15 minutes.
- As soon as the liquid begins to evaporate slowly, you need to add to the total mass the sliced โโtomatoes and other products according to the recipe. Let the mixture boil for about 5 minutes.
- At the very end of cooking, pour cream in a thin stream, stirring continuously. Then wait a bit and turn off the heat, without bringing the soup again to a boil.
Experts advise eating a meal with a toast made from white bread or a loaf to spice it up. Sprinkle the crunchy product on top with grated Parmesan and herbs.
Gentle cream
It's even easier to make a creamy shrimp cream soup . In this case, it is enough to leave only the main products and the result will be achieved. For such a soup you will need:
- 200 grams of shrimp;
- 300 grams of carrots and potatoes;
- salt;
- 200 grams of cream cheese;
- any greens to taste.
Cooking process :
- In a five-liter pan, bring water to a boil.
- Throw vegetables chopped into large cubes and cook after boiling for 20 minutes.
- Add cheese to the boiling mixture, mix, and then cover, remove from the stove and leave it for 10 minutes alone.
- Turn the contents of the pan with a blender into a homogeneous mass.
After that, the soup can be poured into plates and served on the table, abundantly decorated with greens.
Original cooking methods
Creamy cream soup can be prepared not only from seafood. As an additional ingredient, mushrooms (champignons), chicken, fish , vegetables (pumpkin, broccoli) are perfect. Mixtures of components may also be used. For example, soup with fish and shrimp. Required:
- 600 grams of fish fillet (cod, pike perch or saffron cod);
- 200 g shrimp meat;
- 2 onions;
- 1 liter of broth (fish);
- 200 grams of butter;
- 50 grams of flour;
- salt;
- a glass of fatty (33%) cream;
- pepper.
Soup is preparing in 30-40 minutes:
- Grind the products into cubes.
- Fry the onions in an oil pan.
- Add fish, shrimp and leave to stew for 10 minutes. Then remove from heat and let cool slightly.
- Set aside some seafood, and grind the rest of the pan in a blender.
- In addition, wipe the mashed potatoes through a sieve.
- In a saucepan, lightly fry the flour in oil.
- Add the broth, mix and cook for 5 minutes from the moment of boiling, stirring constantly.
- Mix mashed potatoes with broth. Add salt, pepper, cream and bring to a boil again.
The result is a real Japanese soup.
Variety of species
Each national cuisine has its own creamy shrimp soup. The recipe can be selected depending on personal taste and available products. There is another rather original version, for which you just need:
- 400 grams of large king prawns;
- ยฝ lime;
- 2 tomatoes;
- a glass of cream (11%);
- 2 heads of leek;
- 15 grams of flour;
- Parmesan cheese.
This soup is a fast food category. It is only necessary:
- Cook the shrimp for 2 minutes and then peel. Put the meat aside.
- From the purifications of shrimp with salt, lime, bay leaf and wine, cook the broth. This will take no more than 30 minutes. The broth must be filtered.
- Boil vegetables separately, and then chop them in a blender with half the available shrimp meat.
- Put all products together. To the total mass add cream, flour and cheese.
The taste of such a soup is impossible to compare with anything. Delicate, soft and very fragrant, it will please even the most sophisticated gourmet.
