The dish is cooked in the oven, the dough is kneaded with yeast. Baking will be beyond praise. Here are all the products necessary for the preparation of the Dagestan (Darginsky) miracle with filling:

  • warm water - 2 glasses;
  • dry yeast - 1 packet (10 grams);
  • salt - half a teaspoon;
  • vegetable oil - 2 tablespoons;
  • flour - 4-5 glasses (the exact amount of this ingredient in the preparation of the Dargin (Dagestan) miracle will depend on the amount of gluten in the flour);
  • egg -1 piece (necessary to lubricate the miracle before sending it to the oven);
  • butter - 50 grams (to lubricate the finished product).

To make the Dagestan miracle more juicy and tender, put potatoes and meat inside. To prepare the filling you will need:

  • beef - half a kilo;
  • potatoes in the amount of two to five medium tubers;
  • onions - one head;
  • various spices.

Yeast dough

Let's make the dough according to the simplest recipe using water, salt and yeast with flour. Repeat step by step:

  1. We take a suitable deep dish - it can be a large bowl with high walls, a pan or even a small basin. In general, a container in which it will be convenient for you to knead the dough.
  2. Warm up the water slightly.
  3. Pour yeast into a bowl and add water to them. No need to pour out all the liquid at once. In order to breed them, take 250 milliliters.
  4. When the dry yeast dissolves and the reaction begins, add salt.
  5. Add vegetable oil and gradually flour.
  6. Knead the dough; by consistency, it should be elastic, but not tight, do not stick to your fingers and keep the shape.
  7. Cover the dishes with a lid, towel or napkin. Place in a warm place so that the base for the miracle rises well. It will take about an hour, at this time, prepare the filling.

Filling

While the dough rises, do not waste valuable time and start preparing the filling:

  1. Wash the potatoes under running water. Peel the root vegetables and leave them in clean, cool water.
  2. Peel and chop the onion in a convenient way.
  3. Rinse the meat too. Wipe with a towel to remove excess moisture. Grind into small cubes.

The components for the filling are prepared. Getting to the formation of a miracle:

  1. Take out the dough from the dishes, knead it well on the cutting table. Divide into two parts. One part of the test will be the basis, so it should be one third more than the second, which is used to cover the miracle. Roll out most of it into a thin round layer no more than a centimeter thick.
  2. Move the base onto a greased leaf. Now you can lay the filling on the surface. The meat is laid in the first layer. At this stage, slightly salt it, add all the necessary seasonings. The most elementary of them is freshly ground black pepper. But focus on the preferences of your family members. Sprinkle the meat with onion.
  3. Potatoes can be cut into thin circles. Lay out the potato plates on the surface of the meat cubes and onions. Top them with a little salt too.
  4. Roll out the smaller part of the dough similarly to the first one and, having covered the filling with a layer, gently pinch the edges. In the middle of the workpiece, make a small hole about 1 centimeter in diameter. This technique will allow the Dagestan miracle to bake well inside and maintain the desired shape of the finished product.
  5. Lubricate the entire surface of the future miracle with a raw egg. Place the pan in the oven for 30–35 minutes. The oven must first be thoroughly preheated.

After half an hour, the Dagestan dish is ready for a miracle! This is hinted at by the breathtaking aroma coming from the kitchen, and the golden color of baking. Remove from the oven and generously grease the pie with a piece of butter.

To prepare a miracle from a fresh (yeast-free) dough will have to spend a little more time. But you will be generously rewarded with the enthusiastic looks of your favorite eaters. Before you prepare the Dagestan miracle in a pan, decide on the filling. In our case, it will consist of potatoes and cottage cheese. By the way, for the test you can take water or kefir. In the second case, the baking will be softer.

Component List:

  • kefir - 1 cup;
  • flour - 2.5 cups;
  • half a teaspoon of salt;
  • soda - half a teaspoon;
  • two potatoes;
  • hard cheese - 80 grams;
  • butter - 40-60 grams;
  • favorite greens - to taste;
  • freshly ground pepper - according to personal preference;
  • salt to taste.

Cooking technology

You will need to prepare some ingredients in advance:

  1. Cook the potatoes in a "uniform", after thoroughly washing it with a brush. Remove the finished tubers from the water, peel and mash to a puree condition.
  2. Grind the cheese on a fine grater.
  3. Soak greens for several minutes in cool water and then, shaking off excess liquid, grind as you like.

Next, combine the ingredients: mix the potatoes with cheese, salt and pepper the filling to your liking. Add all chopped greens.

To prepare the dough, pour kefir into the dishes and add quicklime soda to it. Next, send the entire rate of salt into the sizzling liquid and, after mixing, introduce in small portions all the flour specified in the recipe. The correct final result is an elastic dough that does not stick to your fingers. In addition, it should be very soft. For ten to fifteen minutes, forget about the test. After this time, knead it well again. Next, proceed to molding the miracle.

Divide the resulting dough into several identical small parts. If the diameter of your pan is 20 centimeters, then you should get 9 blanks for a miracle. A different size of the dishes, respectively, will entail some changes in their quantity. Fill the blanks with potato-cheese filling in two simple ways. Choose which one is more preferable in your case.

The basis for a miracle

Roll out a thin cake from each piece of dough on a table previously crushed with flour. In its center, place one tablespoon of the finished filling. Gather the edges on top and mesh. It turns out a sort of "bag" with a filling inside. Press the surface of the workpiece with your palm so that it is flattened slightly for further action. Gently roll the cake again with a rolling pin. Of course, it is better if the filling during this procedure does not leave the limits of the tortilla. However, even if such a nuisance happens, nothing critical will happen. Roll the miracle to a thickness of one centimeter. If possible, you can make the cake even thinner. But remember that the circumference of the workpiece must match the diameter of the pan.

As in the first option, divide the dough and roll it out, and then lay the finished filling, but only in half the product. The layer should be thin and even. Smooth it with a spoon so that the dough does not tear during formation. Do not reach the edges a bit. Fold the round cake in half. It turns out a huge dumpling. Connect the edges by pressing the dough with your fingers around the entire perimeter. Roll the workpiece to the diameter of the dishes in which you will bake the Dagestan miracle. You can bake a miracle in the form of a semicircle.

Ware the dishes on a very low fire. It should warm up evenly, but not heat up, so that the miracle does not instantly burn. The pan is not greased. Put the workpiece on a dry surface and bake on a very moderate fire. Fry a miracle on both sides. Unleavened products will not be uniformly golden, therefore, having waited for brownish blotches and bubbles to appear on one side, turn the workpiece on the second side. If the cake suddenly swells (this happens), don’t worry and just pierce these air pockets with a fork or knife.

Ready Dagestan miracles should be flat. Put them on a dish from a frying pan, greasing them with oil pounded on a fork. Bake the second cake using the same technology and place it on a dish on top of the first, again greasing it with plenty of oil.
