You begin to pay attention to dried and canned mushrooms, which are sold in stores. Even all-season champignons seem more attractive than usual. Yes, and the unkind weather on the street whispers: "But can you cook, my friend, mushroom soup, with potatoes, with cereals or macaroni, hot and fragrant?" And most often you answer to yourself: "Of course, cook!"

The king of all mushrooms, boletus, fortunately, is sold in supermarkets in dried form. So do not believe the collectors - go to the store. To cook mushroom soup with potatoes from dried mushrooms, they will have to be soaked in cold water all night. It will be enough 200 g per one and a half liters of water. Then washed mushrooms are cut and boiled until final readiness. The recipe that we want to offer also includes pearl barley. Suppose you have found 100 grams of dried mushrooms in a pantry. They must be washed and soaked for a couple of hours. When swollen, the water in which they are wet is filtered and poured into the pan. Chicken broth is added there (total liquid volume is 3 liters). Chopped mushrooms and half a glass of washed barley are lowered into a boiling salted base. When the cereal is almost cooked, potatoes are introduced in cubes (3-4 pieces). While the tubers are boiling, a frying is prepared from onions and carrots. It is added a couple of minutes before readiness. After removal from the fire, greens are placed in the pan (parsley, feather, dill), and mushroom soup with potatoes is left for 10 minutes for insisting.

American champignon cream soup

The recipe for those who prefer these mushrooms. We take 800 grams of champignons, chopped finely and sent to a saucepan with butter along with three chopped onions and a stalk of celery. It is not necessary to extinguish completely, only to softness, 3-4 minutes. After the specified time, the broth (usually chicken, but suitable from another bird and beef) is poured into the saucepan in the amount of one liter. When it boils, cook for 20 minutes. It hardly cools down, passed through a blender, salted, flavored with ground nutmeg and black pepper, after which 2 tablespoons of white vermouth are poured into the resulting mushroom soup with potatoes, and everything is heated together (you canโ€™t boil!) You need to eat immediately, with toasted croutons. And you should definitely feel like a real American!
