Sometimes you want to cook something unusual to surprise the household and try the dish you yourself have never eaten before. And one of such strange dishes that are prepared easily and simply is bread soup - a Latvian national dish whose taste will be remembered for a lifetime.
Distinctive feature of the dish
When talking about soups, a person immediately imagines a hot first course, which must be eaten for lunch in order to warm up and gain strength. However, bread soup is a somewhat unusual dish, which, if eaten for lunch, is not the first and not hot. Indeed, in Latvia, bread soup is a sweet, satisfying and tasty dessert served in a plate for first courses, which is loved by both adults and children. And it is prepared very simply, so that anyone who wants to surprise the household and guests at home with an unusual meal can easily do it. The main thing is to pre-purchase all the necessary ingredients, and then lock yourself in the kitchen and begin to worship. The benefit of everything about everything will be needed in just half an hour, except for the time for soaking the bread, however, at this time it will be possible to do cooking other dishes or do your own thing.
Components
Each housewife usually comes up with how to modify the dish in accordance with their tastes and preferences of the household. But if you want to make bread soup according to a recipe that is accepted in Latvia, then you will need:
- 500 grams of rye bread;
- 165 ml of water;
- 2 tablespoons of raisins;
- sweet apple;
- 120 grams of cranberries;
- 130 grams of sugar;
- a teaspoon of cinnamon;
- 100 grams of whipped cream.
Bread preparation
The most important ingredient in bread soup is bread itself, so itโs best to take the most delicious brown bread for dessert, which even tastes appetizing on its own. So, first of all, you need to cut the crust from the bread, and then cut it into small pieces, put it on parchment and send it to the oven to dry at a temperature of about 180 ยฐ C for 15 minutes. Then we get crackers and cool them a little. While the bread is cooling, put the water on the fire, let it boil, pour crackers in boiling water and leave them to swell for an hour.
Preparation of berries and apples
In order for our unusual soup to turn out to be especially tasty, before cooking it is necessary to carefully sort through cranberries and select the most beautiful berries. Next, thoroughly wash the cranberries and apples, and then clean the fruit, remove the core from it and cut it into small slices. After that, we put 100 grams of cranberries and 70 grams of sugar in a small saucepan, add a tablespoon of water to them, mix well and cook for five minutes.
Making dessert
At the final stage of creating Latvian bread soup, grate the bread together with the water in which it was infused, through a sieve, pour it into a saucepan and cook over low heat for ten minutes to make it very thick. While the bread mass is cooked, we rub the cranberries through a sieve and add to the bread along with all the other ingredients of the dish, except for the cream and the remaining cranberries. All this mixture is well mixed, cooked for five minutes and removed from the heat. After that, let the dessert cool, and then put it on plates and decorate with whipped cream and berries.
Cooking fast and economically
If you donโt have much time to cook our unusual soup according to all the rules, you can make it a simplified version. In this case, we need:
- 200 grams of purchased rye bread crackers;
- 100 grams of raisins;
- 100 grams of sugar;
- glass of water;
- whipped cream.
First of all, you will need to place the crackers in a saucepan, fill them with half a glass of water and leave for a couple of hours to soak. At this time, you can safely go about your own business, and after two hours the bread mass will only be crushed with a blender and put on fire, adding the rest of the water there. As the mixture boils, add sugar and raisins to it and cook the dessert on low heat until it becomes similar in texture to jelly. After that, remove the soup from the heat, cool, pour on plates, decorate with whipped cream and serve.
Holiday dessert
If you are thinking about how to make a delicious dessert soup from bread, which will look very impressive and solemn, then for this you can put it not in an ordinary plate or bowl, but in a special edible bread plate. And in this case, in addition to all the standard ingredients, we will need:
- 100 grams of a mixture of barley, rye and millet flour;
- 5 grams of dry sourdough rye bread;
- a tablespoon of sugar.
The main part of the dessert coincides with the classic recipe. First you will need to dry and soak the rye bread in boiling water, then boil a thick sweet cranberry sauce, cut an apple and cook a dessert soup over a small fire. But in addition to this, bread baskets will need to be made. To create them, you need to mix the flour with sourdough and sugar, and then put the mixture on parchment and send it to bake in the oven for 5 minutes at a temperature of 200 ยฐ C. Then, from the resulting dough, it remains only to fashion a basket, wait for it to cool, pour dessert there, cool it well, decorate with whipped cream and berries and serve.
Cream bread soup
In a regular dessert of bread, you can find lumps or pieces of fruit that not everyone likes. But you can easily get rid of them by making a dessert of creamy consistency, which will simply melt in your mouth. True, in this case we will need to slightly change the composition of the ingredients of the soup. For a cream dessert, we need:
- 400 grams of stale rye bread;
- 100 grams of sugar;
- litere of water;
- 100 grams of cranberries;
- a glass of apple juice;
- cinnamon to taste;
- whipped cream;
- a few leaves of mint.
To prepare such a dessert, first dry the bread in the oven, while letting the water boil, then pour it with boiling water and leave it for an hour to warm it. Then we sort through the cranberries, add half the sugar to it, mix and cook over low heat for five minutes. Next, grind the cranberries thoroughly with a blender and grind the bread mass as well. After that, we place all the ingredients except cream and mint leaves in a non-stick pan and cook the soup there for 10 minutes. In the end, it remains only to cool the dessert, pour it on plates and garnish with whipped cream, putting mint leaves on top. Thus, the dish will look very impressive and everyone will want to taste it as soon as possible.

Sometimes it happens that you do everything according to the recipe, but in the end, bread soup is not so tasty. Therefore, to prevent this from happening, you need to remember some of the nuances of cooking:
