Broccoli soup is an excellent diet dish, which is not only very tasty, but also healthy, since this green vegetable is an indispensable medicine for:

  • cancer, because it contains large amounts of strong anticarcinogens (selenium, carotene, vitamins E, C, A, zinc, potassium, some amino acids);
  • heart diseases, because it contains such a unique composition that helps to remove "bad" cholesterol from the body and regulates blood pressure;

  • diseases of the stomach, as it provides diet with fiber and supports optimal acidity due to vitamins and magnesium;
  • diabetes and high blood pressure, because broccoli has chromium.

Broccoli is eaten raw. But after heat treatment, the vegetable retains almost all of its "baggage" of useful trace elements and vitamins. Therefore, it is recommended to boil, bake or fry a little.

Broccoli Sur with Chicken Fillet. Two hundred grams of breast should be diced and boiled in two liters of salted water. In about ten minutes add potato wedges, finely grated carrots and vegetable inflorescences (300 grams). Cook for fifteen minutes and turn off the broccoli soup. Serve with sour cream and chopped dill.

Broccoli cream soup with cheese will be delicious. Heat two large tablespoons of olive oil to a sizzling state in a deep saucepan. Add the cubes of two potatoes and one onion to it. Fry vegetables for five minutes. Next, put in a pan two hundred grams of broccoli inflorescences, the same amount of Roquefort cheese and one liter of vegetable broth. Boil the soup for half an hour until cooked. Then whip everything in a blender, add one hundred and fifty grams of fat cream, a little salt and seasoning to taste. Boil a few inflorescences for five minutes in salted water and decorate them with broccoli soup. In order to make this dish more useful, you can add two hundred grams of cauliflower. Get the original soup. Broccoli will give it a special tenderness and aroma.

This vegetable goes well with cream and oily red fish. You can surprise your family by making broccoli and salmon soup. Make a mixture of milk and water 1: 1, add a pound of coarsely chopped potatoes and broccoli inflorescences to it. After about ten minutes, put the salmon cubes (200 grams), salt and a little red pepper. Serving such a first course is recommended only hot, with the addition of a small amount of fat cream directly to the plate.

Broccoli soup with crackers is prepared as follows. In two liters of boiling salted water or chicken broth add three hundred grams of broccoli inflorescences, pieces of one leek, cubes of three small potato tubers. Cook until cooked for twenty to thirty minutes. At this time, prepare homemade crackers. Cut white bread into small cubes, fry in a saucepan with melted butter until golden brown. Pull them out on a towel to absorb fat. Then sprinkle with salt and various seasonings.

The proposed options for broccoli soups can be eaten immediately, or beat in a blender. In the event that the dish is too thick, it is recommended to pour a little cream.
