Sweet pickled cabbage - a dish prepared for future use in the winter from mid-October to mid-November. Prepared according to the recipes described below, it turns out to be tasty and crispy, it retains almost all of its properties well. It can be served as a snack for soups, boiled potatoes, baked fish, cereals or steam cutlets, any meat.
How to prepare cabbage?
Before proceeding with the preparation of pickled sweet cabbage, it is necessary to carefully chop or cut its heads in the garden and bring it into the house. Then remove and discard the topmost contaminated leaves. All damaged or too soft "covers" must also be removed. Now you need to carefully cut the cabbage into 4 parts with a sharp knife, while removing the stalk. Next, it must be crushed. To do this, it is better to use a knife with a wide blade or "cross-section." Cabbage should be cut into strips with a width of about 1-2 cm and a length of 3.5-4 cm so that it does not lose its crunching property.
How to cook marinade?
Dishes without spices and seasonings are like marriage of convenience, they are just as fresh and uninteresting. Therefore, when harvesting cabbage, it is definitely worth using salt, peppercorns, a little sugar and vinegar. If desired, you can also add cloves, nutmeg, lavrushka, cinnamon, coriander or Provence herbs. Of course, you can follow the chosen recipe for sweet pickled cabbage for the winter. But the secret of a good workpiece that you really will like is simple - all the ingredients should be added according to your own taste. There is no need to be afraid that in this case the banks will explode or the cabbage will turn sour, this will not happen. On the contrary, they will stand much longer.
How to pickle cabbage?

Take a small head of cabbage, peel, wash and chop. Do exactly the same with 4 cloves of garlic and carrots (5 pcs.) Put everything in a deep bowl, gently knead with your hands, mix. Pour boiling brine from 1 liter of water, 1 cup of granulated sugar, 2 tbsp. tablespoons of salt, half a glass of 5% vinegar and 100 ml of vegetable oil. Stir, cover with a lid or dense material, leave for a day. Arrange on sterilized liter jars and roll up.

Peel and chop 1 forks of cabbage (2 kg), 2 carrots, 1 sweet pepper and 3 cloves of garlic. Put as sliced โโinto a large pan, layer by layer. Pour with hot brine prepared from 1 liter of water, 200 ml of vegetable oil, 1 cup of 5% vinegar, 3 tbsp. tablespoons of salt, 8 tbsp. tablespoons of granulated sugar and 2-3 leaves of parsley. Put some oppression on top (you can use a piece of brick or an inverted plate, for example). After 2.5-3 hours, pickled quick sweet cabbage can already be eaten or used to make vinaigrette.

Peel, wash and chop 1 fork of cabbage (2.5 kg), 1 medium carrot, 4 cloves of garlic. At the bottom of a three-liter can, put 5-7 peas and 2-3 leaves of parsley. Fill the container to the top with chopped vegetables. Pour 2 tbsp. tablespoons of fine salt and 1 tbsp. a spoonful of granulated sugar, pour boiling water. Add 100 ml of 9% vinegar. Roll up and wrap up immediately. Leave to cool. You can try it after 2 days, but itโs better to put it in the cellar for the winter.

Peel and grind in any way 1 kg of cabbage, 3 carrots and 2 pcs. bell pepper. Pour into a large saucepan, add 4 pepper peas, 1/4 part of nutmeg, 3 leaves of parsley. Pour in boiling brine from 300 ml of water, 2 tbsp. tablespoons of salt (with top) and 300 ml of 4% apple cider vinegar. Stir, press down with a load, leave for 6-7 hours. Arrange in small jars and roll up. Keep refrigerated.
What should be remembered?
When cooking pickled sweet cabbage for the winter according to any of the above recipes, 2 things must be remembered. So, vegetable oil and vinegar should be poured into the pan after boiling water and turning off the gas. Otherwise, all the liquid from the enameled container will escape to the stove and extinguish the fire.
In addition, making preparations for the winter from cabbage in accordance with the lunar calendar is for the growing month or 5-6 days after the full moon. In this case, they will be preserved best.
