Smoked pea soup - a recipe that is simple in embodiment

Among the variety of soups that are prepared all over the world, a considerable place is given to pea soup, which is popular due to its nutritious value. It is distinguished from all other soups by its special taste, which is inherent only to it.

Pea soup can be prepared with whole or crushed peas, but, unlike crushed peas, which are well boiled without soaking, whole should be soaked in water for several hours before cooking. In the winter season, pea soup is cooked from dried peas. Smoked pea soup, the recipe of which will be given in this article, refers to those types of pea dishes that are very appropriate to cook in the winter.

But do not forget that some types of pea soup, such as smoked pea soup, the recipe of which will be given below, are not recommended for those who adhere to the concept of separate nutrition. Pea soup with smoked meats - a simple recipe, but at the same time, soup prepared according to it is distinguished by its favorable taste.

To prepare you will need:

  • 250 g. Crushed and sorted peas;
  • 300 g smoked ribs;
  • 1 potato tuber (medium size);
  • 1 carrot (small);
  • 1 small onion head;
  • salt and black pepper (to taste);
  • chopped parsley (exclusively for decorating the finished dish)

First soak the peas and let it brew for 3-4 hours, then drain the water. Perform the initial processing of vegetables and cut them into small cubes. Cook the broth from smoked ribs, then strain it and bring to a boil. Add peas to the boiling broth and again wait for the next boiling. Then add salt and pepper to taste, and after that, half-cooked soup needs to be boiled for another 15-20 minutes on low heat. Next, lay out the previously sliced ​​vegetables and continue to cook until cooked, then bring the soup to a puree state using a mixer or blender.

Right before serving the soup, it is decorated with slices of smoked meat and herbs.

Pea soup with pork ribs

To prepare you will need:

  • 250 g peas (you can take both whole and crushed);
  • 450 g of pork (not greasy!) Ribs;
  • 1 head of onion (large);
  • 3 small carrots;
  • 8 large potatoes;
  • basil;
  • 2 small bay leaves;
  • salt and black (ground) pepper to taste.

Before cooking, the peas are soaked for a while, which will depend only on what kind of peas you have chosen: if you selected whole peas for cooking, it is advisable to soak them for longer, and if crushed, only 2-3 hours are enough.

Pork ribs must be poured with water and put on fire. When the meat boils, it must be removed and washed, and then put back into the pan and, pouring clean cool water, cook until fully cooked. As soon as you understand that the broth is ready, put bay leaves in a pan with it, and then strain it through a sieve, after removing the boiled ribs from it.

In the finished transparent broth, we pour the already soaked peas and bring to a boil. In a boiled broth, you need to put potatoes peeled and cut into small cubes in advance. During the cooking process, do not forget to remove the foam from the surface of the broth. When the potatoes are ready, add peeled, chopped and fried onions and carrots to the soup and cook a little more, reducing the heat to a minimum.

When the soup is ready, put the pork ribs in the pan, salt, pepper and add spices, you can serve.
