Mushroom Yushka is a fragrant and satisfying first course, which is often prepared by Ukrainian housewives. There are many variations of this soup. But the main ingredient remains the same - mushrooms. They can be both fresh and dried. We offer you several recipes for every taste. Good luck in the kitchen!
Yushka mushroom in Transcarpathian
Grocery list:
- flour (premium) - two glasses is enough;
- cube of mushroom broth - 1 pc.;
- medium onion;
- 300 g fresh champignons;
- sour cream of medium fat content - 1 tbsp. l .;
- greens (cilantro, parsley, dill branches).
Practical part
- We spread it on the table, all of which the mushroom yushka will cook. What's next? We take champignons, wash them in running water. Carefully clean the hats with a knife. The legs do not need to be cut off. Everything goes to business. Mushrooms are cut into small plates.
- Peel the onion. First, wash the pulp, then grind it into a cube. Fry over low heat. Transfer the contents of the pan to a plate. While we clean aside.
- Now we send champignons to the hot pan. Fry using refined oil. Do not forget to flip the pieces. The whole frying process will take no more than 15 minutes. Turn off the fire.
- Take another skillet. Dry the flour in it. As soon as it gets a golden hue, immediately turn off the fire. The flour should cool completely.
- We fill the pan with water (by Β½ volume). We put on the stove. We wait until the liquid begins to boil. Add a cube of mushroom broth to the pan . Mix. There we lay the fried mushrooms and onions. Mix again.
- In a bowl, combine sour cream and cooled flour. The resulting mixture is sent to the broth. If lumps appeared, then do not build to worry because of this. Just stir the broth, then they will disappear. After 5-10 minutes, the mushroom mushroom according to the Transcarpathian recipe will be ready. Let the dish stand for a while under the closed lid. - red or white beans - enough 250 g;

Step number 1. Rinse the mushrooms thoroughly with tap water. Put them in the pan. Fill with water. Cook until tender. This process takes 20-25 minutes. We donβt pour the broth anywhere. Cooked mushrooms should be cooled. Then grind them with a knife.

- medium onion - 1 pc.;
- green onions - half a bunch;
- 100 g of dried mushrooms and small pasta;
- one large carrot;
- refined oil - enough 3 tbsp. l .;
- 1.5 l of broth;
- favorite spices.
Cooking process
- Where do we start? Put dried mushrooms in a bowl. Pour them with boiling water (300 ml). Leave for 20 minutes. Then you need to strain the mushrooms. We do not pour out water from under them, but save it. We still need it.
- Pour the necessary amount of oil into the pan. Warm up on the stove. Add chopped onion (preferably a cube) and grated carrots on a coarse grater.
- Pour the liquid remaining after cooking the mushrooms into the pan. That's not all. Mushrooms are cut into medium pieces. We ship to other ingredients. We wait until all this boils. Reduce the fire to a minimum. Cook for 1 hour.
- Fire can be turned off. Add chopped green onions to the soup. Cover with a lid. We notice 10 minutes.
- In another pan, in salted water, boil small pasta. What's next? We send pasta to soup. Mix. Sprinkle with your favorite spices. If necessary, preheat soup.
