Seafood is very good both as an appetizer and in salads. Especially popular is the Spanish tapas (hot appetizer), called Roman Squid Rings. Why is it in Roman? It is difficult to give a clear answer to this question today. Either the ancient Romans left as a legacy after their conquests, or the recipe was brought to Spain from Rome ... But it’s better not to puzzle over the origin of the name of the dish, but to quickly start preparing it. Moreover, the process itself should not take us more than half an hour.

So, we take 2-3 small carcasses of our cephalopod mollusk. For speed, you can buy in the store already peeled and cut squid rings, which are enough to defrost. In a different situation, we are faced with the task of cleaning the body from the upper film. It is quite easy to do this: we squeeze the carcass and pull the film over ourselves, removing it like a stocking. Another thing is if you still have to cut off the tentacles and chop off your head, gut, scrape off the ink ... The process can be delayed.

Suppose you handled the case of cutting the mollusk. Now you need to weld it. And this is the main secret of how to prepare squid rings in batter so that they turn out to be tender and tasty, and would not resemble car tires in the dough. Boil them for no more than two minutes. It is better to throw squid immediately into boiling water, and after heat treatment it must be thoroughly dried. If you are dealing with a carcass, cut it into rings up to one centimeter thick.

To make batter, we will need: two eggs, white flour, salt, pepper, half a glass of milk. Shake the eggs with salt and pepper (you can add a pinch of sugar). Add milk and flour sifted through a sieve, stirring continuously, until lumps disappear and a homogeneous mass is obtained, similar in structure to sour cream. In a fryer or in a frying pan, heat any vegetable oil. Dip the squid rings in the batter and fry on both sides until golden brown, then put it on a paper towel so that it absorbs excess fat. The dish is served hot.

Delicate dressings based on mayonnaise are best suited to this delicacy, but you can also experiment. For example, crush two cloves of garlic in half a glass of mayonnaise. Squid rings are also popular in Southeast cuisine. They do not boil the clam there, and marinate for half an hour in lemon juice with salt and pepper. A glass of light beer is added to the batter, along with the above ingredients, and the mass is whipped with a mixer, after which they are allowed to stand for several minutes. The rings are first rolled in flour, and then dipped in the dough. Fry in a well-heated skillet, completely immersed in hot fat. In the East, they are eaten as a cold appetizer for beer or white dry wine.
