The special taste of homemade wine from berries and fruits makes it popular among the population for several hundred years. Although the alcohol industry offers an extensive selection of drinks for every taste, they cannot be compared with home-made preparations. Gooseberry wine occupies a worthy place among similar drinks and tastes very similar to grape.

Using various varieties of these “striped watermelons” and mixing them with raspberries, currants or apples, you can get bright color shades, a delicate aroma and incomparable pleasure. Although you can make good sparkling wine from gooseberries , it is most often used to make dessert or spirits.

To cook gooseberry wine at home, you need to know a few subtleties and adhere to the technology. Having several different recipes, you can choose the most suitable for yourself. Where to start? From the selection of suitable containers and the manufacture of yeast. The best option would be glass bottles with a capacity of 10 liters. But if you are preparing a larger quantity of the drink, then 18 liter plastic bottles for drinking water are perfect.

Not a single good gooseberry wine can be obtained without a good wine starter. You can cook it yourself. This should be done approximately two weeks before the time of manufacture of the drink. We will need freshly picked raspberries. Good conditions for collecting are daytime and dry, sunny weather. Remove the ripe raspberries from the bush, remove the sepals and twigs from it. But, in no case do not handle water.

Grind raspberries. For two glasses of berry puree we take half a glass of granulated sugar and one glass of well water. The resulting mixture is poured into a glass jar and, closing the neck with gauze, put in a dark and warm place. From the moment fermentation begins, we wait four days and filter the resulting mixture through a fine sieve. We throw out the pulp, and use the fermented juice as a wine starter. To make ten liters of a wine drink, you need three hundred grams of such raspberry juice. You can prepare a starter for each serving of wine or use one hundred grams of precipitate instead after preparing the first batch of the drink.

We make mashed potatoes from five kilograms of red berries using a meat grinder or food processor. Dilute it with boiled water, observing the proportions. Ten glasses of berry mass will require one glass of water. Add 200-300 grams of the finished yeast and pour the mixture into the prepared container. We cover it with gauze and hold in a warm place for about three days before the start of fermentation.

We filter the juice from the pulp, dilute it with water in the same amount, add one hundred grams of granulated sugar for each liter of liquid. Pour the resulting solution into the same container, cover with a rubber glove and leave until the end of the fermentation process. Re-filter the drink, getting rid of sediment. We pour wine into glass bottles, close them with corks and put them in a cool place for 3-4 months for insisting.

We dilute five kilograms of gooseberry berry puree with five liters of 25% sugar syrup, pour into prepared containers and leave for ten days for fermentation. Every three days, mix thoroughly. We filter through a fine sieve, completely getting rid of the pulp. Pour juice in the same container and close it with a rubber glove. Leave for a month and a half for complete fermentation. After that, carefully drain the resulting wine from the sediment. We pour it into glass bottles, cork it with lids and leave it to insist for two months in a cool place.

Homemade gooseberry wine, prepared according to any of the presented recipes, turns out to be beautiful golden color and has a unique delicate aroma.
