Bring the milk to a boil, allow to cool to body temperature (this is the optimum temperature for the development and vital activity of bifidobacteria and lactobacilli). Then we introduce into the cooled milk our sourdough, for example sour cream. Leave the milk alone until sour. Next, take the sour milk and put on a slow fire. After a while, you will notice that the serum begins to separate. Do not bring to a boil, otherwise nothing will work. The slower you heat the milk, the more tender the curd will turn out. We put the cottage cheese on a sieve, let the whey drain, it's done. Well, that’s all, now you know how to cook the cottage cheese for the baby by the method of ripening. From such a quantity of cottage cheese it turns out enough, so that they can also feed older children.
