Saber is a fish found in distant tropical seas, but today it is not uncommon in our fish markets. The length of one individual can reach two or more meters, but, of course, such specimens are bought by the best fish restaurants. As a rule, smaller carcasses get into retail sale - up to 1 meter.
Cooks love saber fish for a small number of bones and the expressive taste of meat. In addition, it is very useful due to its high content of trace elements and vitamins. What to cook from this fish? There are many ways. Some of them require exotic ingredients, but today we can do without them.
Choose a fish
Saber is a fish that belongs to the family Hairy-Tailed. Pay attention to the smell, because before you get to the counter, the fish has come a long way. Clear, cloudy eyes are a sign of freshness and proper storage during transport.
Remember that a saber is a fish (photo posted in the article), which is not like other fish. She has a large predatory head with a large mouth. The tip of her body is elongated and really resembles a hair. In the market, you can easily recognize her thanks to this feature.
Option for a simple dinner
If you are planning a simple but tasty dinner, a saber is great (fried fish goes well with cereals and vegetables). And cooking it is easy.
This dish has no secrets. Remove the head, cut off the sharp fins with scissors, cut the carcass into pieces 5-7 cm long. As a breading, you can use flour, crackers, semolina.
Sauté the slices until golden brown. Better to do it over low heat. Remember, the heat treatment time of the fish should not be less than 20 minutes. If you like crisp, do not cover the pan with a lid.

Chinese style
Residents of the Far East really appreciate this fish. Chinese recipes have taken root here too. Of course, they had to go through some modernization.
This dish is perfect for a festive table. The recipe is designed for 1 kg of fish. In addition to the saber, we will need the following products:
- ginger root - 2 cm;
- garlic - 3 cloves;
- green onion - 3 branches;
- red pepper (optional);
- dark soy sauce 3 tbsp. l .;
- vinegar - 1 tbsp. l .;
- water - 100 ml;
- flour, preferably rice;
- salt, sugar, pepper - a pinch.
We cut the fish, roll in flour, fry until cooked. We spread it on a paper towel to remove excess oil.
Mix the sauce with vinegar and water, add spices, knead. If you want the sauce to be thick, enter 1-2 tbsp. l starch. In a frying pan, fry ginger and garlic, add chopped onions to reveal its aroma. We spread the pieces of fish, pour the sauce, put the simmer on a small fire. The dish will be completely ready in about 25 minutes. Before serving, garnish with sesame seeds.
Outdoors
Going on a picnic and thinking about the menu? An excellent solution can be the same saber (fish). How to cook it in nature, it is easy to guess if you at least once cooked it at home. This fish is very suitable for roasting in a fire.
You can make kebab out of it. To do this, first immerse the pieces of fish in a soda mineral marinade and add chopped onion rings. Juice from half a lemon will add spicy notes. From seasonings, oregano, dried basil and dill, a mixture of peppers, paprika are well suited. Keep the saber in the marinade for at least two hours. Put on skewers or lay on a grill, bake over coals, pouring marinade until a golden crust appears.
You can cook this fish in foil. A great solution for a summer picnic is a saber with vegetables, baked in a fire. Put on two layers of foil pieces of fish and eggplant, add the halves of bell pepper and tomato, generously sprinkle with chopped onion rings. Pack tightly in foil and burrow in charcoal. The dish is baked in about 30 minutes, although much depends on the temperature and the amount of coal.

Saber is a fish that can be served at the festive table with a side dish of mashed potatoes, grilled vegetables, brown rice or good pasta. A variety of sauces are perfect for it : tartar, paprika, bechamel, salsa, soy.
If the format of the event involves alcohol, serve classic white wine to the saber.
