Highball cocktail got its name from the dishes in which it is served. Highball translated from English simply means "tall glass." As a rule, this is a glass with a volume of 270 milliliters, a simple round or square shape. Highball is taller than a glass called old fashion, but lower than collins. It is clear that from such dishes only longs are drunk - cocktails designed for a long savoring. It is customary to drink short and shot drinks in one sip, therefore the dishes are “short” for them. But does this mean that any cocktail poured into a tall glass will be called a highball? Does this drink have one recipe or several? In this article we will clarify this issue. What is primary - utensils or filling?
A tall glass is created for a large amount of liquid. As we found out, highball holds between 250 and 300 milliliters. But the shape of the glass is also important. Simple, with even walls, it holds foam well. This is the essence of such a drink as a highball cocktail. He saw the light in America, at the end of the nineteenth century, and at first it was strong alcohol diluted with a mineral water (soda or lemonade). Then the ingenious imagination of the bartenders rewarded highball with numerous younger “brothers” and “sisters”. So, if you pour sweet liquor, lemon juice and mineral water into a tall glass, then such a cocktail will already be called ricky. And if egg white falls into the number of ingredients, then physical is born as a result. If you add a lot of lemon juice and sugar syrup to strong alcohol, such a drink will be called a sling. When we replace the distillate with wine, which covered it with berries, orange and ground ice, we get a cobler.
Hot highballs
A tall glass with thick walls holds the temperature well. Often ice is added to the longs. But this does not mean at all that a highball cocktail is an exceptionally refreshing drink. Depending on the season, they are warming. A classic example of winter highball is grog. The classic drink is made on the basis of rum, but cognac, brandy, and liquors are also allowed. The second ingredient of grog is tea. Since the drink was invented by British sailors, they soon began to add hot milk or cream to it. Here is the recipe for such a winter highball. Mix in a glass 50 g of cognac, 15 g of dark rum, two teaspoons of liquor. Pour on top of one hundred milliliters of hot, but not boiling milk. Classic grog is obtained by mixing 50 g of rum with a mug of tea. If desired, you can add a circle of lemon or two tablespoons of honey.
Fixes
These are called mixed cocktails that are prepared outside a highball glass. A tall glass is filled with ice cubes. The prepared cocktail is poured on top of it. It is believed that, penetrating down through the ice layers, the ingredients of the cocktail fully reveal their taste characteristics. Let’s cite the Brandy Buck cocktail as an example. We put ice cubes in highball. In a shaker bowl, mix 45 ml of any brandy, 30 milliliters of light liquor (preferably Cream de Ment) and 15 ml of squeezed lemon juice. Pour the mixture onto ice. Frappe
Initially, Frappe meant strong sweet alcohol (liquor, liquor, tincture), which was passed through ice. The frappe is distinguished from fixes by the form of the latter. These are not cubes, but finely crushed crumbs. Before crushing ice at home, make sure that your blender bowl is not plastic. The amount of “snow” is also important. Fill highball glasses with ice crumb. In a separate bowl, mix the dark cream liqueur “Cream de Cocoa”, orange juice and “Mandarin Napoleon”. The proportions are: 1.5: 1: 0.75. Mix and pour into glasses. How to make a coffee-frappe cocktail? First, brew aromatic arabica or robust robusta. Strain the coffee from the thick. Add sugar. Pour into a highball filled almost to the brim with ice crumb. Coffee frappe is also overgrown with a mass of modulations. You can add milk, liquor, cognac. In tall glasses, it is customary to make fizzy - effervescent, foaming drinks. Soda, lemonade, Coca-Cola, but also champagne can create a stable foam. Consider, for example, how to make a gin-fizzy cocktail. Fill the shaker to half with ice cubes. Pour in 60 milliliters of gin. Add a spoonful of icing sugar. Squeeze the juice out of half a lemon.
