Stubborn is a rather unpretentious tree of small size, growing up to 5 meters, and therefore resembles a shrub. Its fruits have significant beneficial qualities, for which they are consumed raw, added to the filling for pies and other sweets and, of course, prepared for the winter.
Along with all the usual options, such as jam, jams, compotes, marmalade, etc., experts learned how to cook and wine from stubborn. This homemade drink has all the beneficial properties of the original product and has a sweet and slightly astringent taste with a pleasant acidity. And its main advantages are the simplicity of its preparation and long-term storage. Of course, very few summer residents prepare
wine from corn, as they are used to more traditional home-made recipes for this drink made from blackberries, raspberries, blueberries, rose hips or apples. However, those lucky ones who timely purchased seedlings of this plant and carefully cultivated them will certainly appreciate its fruits. Of course, at first, many people think about what can be cooked from corn, but this small tree is unique in its kind and will bring many recipes to your cookbook.
Training
So, this plant provides really wide possibilities for using its fruits. However, one of the special recipes for its preparation is wine made from thorns. For it, you need about 2.5 kg of fruit, well ripened, sweet, not damaged. Plus 1.5 kg of sugar, yeast and a liter of clean (preferably filtered) water. The first step is the
preparation of syrup - the basis of wine. To do this, pour water into a large pan (in the absence you can use an enameled basin or even a bucket), put on a slow fire and gradually pour sugar in it. During cooking, a white foam will form, it must be carefully removed so that later the wine from the plums does not have to be filtered. And when it disappears, it will be a signal for you to remove the pan from the heat and cool. Now prepare the berries. Rinse them thoroughly, place in another container, pour boiling water and boil gently until the peel on the fruits crack, and cool. So, we pass to the final stage.
Fermentation
Wine made from stubborn requires a long fermentation process. In order for it to flow correctly, you need to place the berries in a large, strictly sealed bottle, pour 1/3 of the syrup and already fermented yeast, and then mix gently. We make a hole in the bottle cap to the size of a flexible hose, tightly twist it, and lower the second end of the tube into a jar of water. The gas resulting from the fermentation process will leave through it, and other air will not enter the tank. So the wine should stand for about a week, after which it needs to be filtered into another bowl and the whole process repeated again until the bubbles completely cease. Then just close the container and leave everything for a week until the cooking is complete. Then it will be possible to bottle the wine and put it into storage in a cool, dark room.
