In 1970, the construction of a new bakery with a daily capacity of up to 65 tons of bakery products began in the city of Dedovsk, Istra District, Moscow Region. The first loaf was baked on March 20, this date is considered the birthday of the enterprise. The production was small: only 150 people worked on six production lines. The modest assortment did not even reach 20 items.

In 1980, the leadership of the enterprise was transferred to Valentina Gorbunova, under whose supervision the Dedovsky Bread factory was transformed. With it, the quality of products improved: for wheat bread, black Borodinsky, waffles and fragrant buns, people specially came from the district center and even from Moscow. The creation of the transport department, waffle and confectionery production belongs to this period. An own small trading network was deployed not only in Dedovsk, but also in neighboring settlements.

And today's director Igor Glukhovtsev preserves carefully accumulated traditions. Grandfather’s bread still has the same crisp and delicate flesh. The enterprise is well-groomed, the facade of the buildings and the interior decoration of the workshops are repaired. Technological production is constantly being improved, equipment is being updated. One of the major modernization projects was the construction of a silo for bulk storage of flour in cooperation with the Agro-3 company.

Today, the bakery plant employs more than 400 workers. Although seasonal productivity has decreased compared to the old days to 30-40 tons of bread, the product range has grown incomparably and exceeded 180 items. Moreover, each of the products is still baked with love. Grandfather's waffles, cakes and Easter cakes are especially famous.

Work in market conditions showed that mass varieties of bakery products are in less demand than before. Variety of assortment comes first. It is not enough to produce 2-3 types of loaves and as much black bread. Realizing this, the Dedovo bakery is constantly searching for new recipes and improving old ones. At the same time, the quality complies with GOSTs and accepted specifications.

  • cakes, cakes, rolls, muffins;
  • cookies, bagels, marmalade, gingerbread cookies, waffles;

By the way, Easter cakes on "Grandfather's bread" are made in a more time-consuming, sparing way. Although the production time from 1-2 hours increased to 4-5, the quality is incomparably high: the dough comes out very lush, the flesh is stale slower, the taste lasts much longer. The coupled method allows you to abandon the "fashionable" additives, accelerators and baking powder. The basic composition of Easter cakes includes only water, yeast, flour and a few eggs (for better fermentation).

After four hours of fermentation, cakes are formed from dough. Previously, sugar and natural ingredients are added to the mass to add taste, aroma and color: candied fruit, raisins, butter, powder, glaze - the imagination is unlimited. Actually, baking is carried out in two types of ovens: rotary and continuous. In each batch, up to 200 products are prepared. After 60 minutes, incredibly fragrant Easter cakes are taken out of the ovens.

Laboratory

The first step in the process chain is the characterization of the supplied raw materials. Quality control at the Dedovsky Bread factory is carried out by our own certified laboratory. Particular attention is paid to the evaluation of the quality of flour. Experts determine its moisture content, characteristics and amount of gluten. If the raw material does not meet the required parameters, it will never be used at the factory.

To check the so-called fall number, a special device -7 is used. This indicator allows you to control the quality of grain and finished flour. Also, in the laboratory, finished bakery products are examined for compliance with technical specifications, sanitary and hygienic and other standards. The passed control raw materials are unloaded at the bulk storage warehouse.

Immediately after the foundation of the enterprise in 1970, products were sold exclusively on the territory of the Istra district of the Moscow region. However, over the past decades, marketing policy has changed dramatically. Today, bread from grandfather's bakers can be purchased in most suburban and capital stores.
