The founder of the "New World" is considered to be Prince Golitsyn. Champagne has been created here since 1878 using classical technology developed in France. In those days, the imperial family loved him very much, so it was served at the court in honor of the coronation of Nicholas II. Then, however, as now, each bottle was stacked in the cellars for manual maturation, where it was aged for at least three years. Today, anyone can afford such champagne.
Champagne production
"New World" - champagne, which is prepared according to French classical technology, which provides for aging the drink in a bottle for at least three years. The house of champagne uses for its preparation the best materials that are in the Crimea. They undergo filtration, blending, after which a circulation mixture is created, which is bottled and corked. Bottles are placed in the cellars, stacking them horizontally. Here they stand at a temperature of twelve degrees Celsius for at least three years. For this period of time, four changes are made manually so that the sediment does not stick to the walls of the container.

After the lapse of time, the container is sent for remuage on oak music stands, where it is manually attached to any angle of inclination. There Crimean champagne "New World" spends three months. During this time, the bottles are placed in music stands and left until the sediment settles on their walls. Then they easily hit the edges of the music stand and turn it so that the sediment settles on the inner surface of the container. After the sediment is fully mixed into the cork, the champagne is sent to degorging, where the sediment is completely removed along with the cork. All this is also done manually. The master quickly uncorks the champagne, while the sediment, together with the cork, is released under the pressure of carbon dioxide. All this happens within a few seconds. After that, liqueur is poured into each bottle, thanks to which the Crimean New World champagne acquires a sweetness and a bouquet of aromas. Then the bottles are corked, which is fixed with a wire bridle. Ready champagne is kept for another ten days, and then labels are glued to it.
Champagne Vineyards
In order to make champagne wines "New World", they use grapes from the Crimea, because it is very similar to Champagne in many ways. Here the best grape varieties are grown for the preparation of champagne wines of the Chardonnay, Pinot groups and so on. Here, the technology for the production of wine materials is strictly adhered to, so the final product is of high quality. It is interesting that even the grapes are harvested manually, they are harvested in dry weather, laying out each variety separately, rejecting bunches even with minor damage. The grapes are processed after four hours, and the pressing of the berries occurs very quickly in order to minimize contact of the wort with oxygen, so the color, aroma and taste are preserved.
