From pears you can make a delicious low-alcohol drink - cider. In France, it has the name Poiret, in Spain - the perada, the British call it Perry. Fermented pear juice is used to produce pear cider.
Drink history
The drink got its name because of the varieties of pears that were specially grown. The height of these trees is more than fifteen meters, to achieve it requires 250 productive years. One such tree produces more than five tons of crops. According to the manufacturing technology, the drink is similar to apple cider, but it contains more sugar. Pear cider, unlike apple cider, has a less sharp, light and distinctive taste.
The French emperor Napoleon appreciated the drink for its taste, excellent sparkling, light sweetness with a little acidity and astringency, a pleasant aftertaste.
Normandy is considered the birthplace of pear cider, the Norman invasion led to the spread of the drink in the north of England. In the seventeenth century, it was already known throughout England. Pear cider was produced in Gloucestershire, Herefordshire and Worcestershire. Climatic conditions in these territories did not allow apple trees to take root; only pears were well grown. In the twentieth century, pear cider, which was produced from pear juice of special varieties, was called βperryβ. A pear cider called drinks made using pear concentrate. Also, juice of other fruits and sugar were added to such drinks.
Pear cider at home. Simple recipe
Ordinary pear varieties are not suitable for making whole wine, most often they are added to apple cider. But some varieties are grown specifically for the production of pear cider. These varieties contain tannins, as well as acid in large quantities, so you can make a tasty drink from these fruits without using other fruits. The more fragrant and sour the pears, the better the pear cider.
The recipe for a drink is not complicated. To obtain a tasty and fragrant cider, it is first necessary to prepare the fruits.
The selection of fruits for the preparation of the drink
Before making pear cider, ripe pears are carefully sorted. Hard fruits are left for several days in a cool, dark room to make them soft. The fruits need to be washed, removing rotten and spoiled, and cut into small slices, removing the roots and core. Then the pears are grated with small holes or passed through a meat grinder.
The pear cider recipe at home is designed for a 10 liter bottle. You need 8 kg of fruit, 1.3 kg of sugar, a handful of raisins.
Cooking
Pear gruel is mixed with sugar, unwashed raisins are added and placed in a bottle. There should be free space in the container. The jar is covered with gauze and left in a warm place for fermentation. After the smell of fermentation appears, the contents are filtered, squeezed juice and poured into a dry container, set the water shutter.
It is better to keep the bottle in a dark and cool room, for example, in the basement. The fermentation process will end in about a month and a half. After this, the drink must be filtered and bottled in clean bottles. Corked bottles should be stored horizontally in the basement. Three months later, the drink will be ready.
Recipe number 2
Take five kilograms of pears of sour varieties, five glasses of sugar, 25 g of yeast. Pears need to be sorted, washed, cored and spoiled places, cut into slices and mashed using a meat grinder or fine grater. Juice is squeezed out of the puree through cheesecloth, mixed with sugar, poured into a glass dish and put in a warm place.
If fermentation does not begin after a few days, yeast is added. To do this, 25 grams of yeast are bred in a heated glass of juice. When the foam appears, mix with the rest of the juice. After five days, fermentation will begin. After the appearance of sediment at the bottom, the drink is poured into a clean container and tightly closed. Cider is kept in the cellar for six months. The longer the drink is infused, the better its taste and aroma.
Store the finished product in the refrigerator, eat chilled with fresh fruits.
Making sugar-free pear cider
Pear cider at home can be made without sugar. To prepare the drink, ripe fruits that have a sour taste are selected. They are kept warm for several days so that the fruits become soft. Then they need to be mashed using a meat grinder or grater. Juice is squeezed out of the obtained puree and put in a warm place.
After the bubbles are on the surface and sediment appears at the bottom, the cider is poured into a barrel, which is tightly clogged. The container is stored in a cool place for about six months. Then the drink is filtered and bottled.
Apple and pear cider
You can make a drink using apples. To do this, you need two parts of apples and one part of pears, elderberry (flowers), a little coriander, water.
Cooking
Pear cider, the recipe of which we examined above, involves the use of acidic fruits. To make cider from apples and pears, sweet pears are needed, and apples must be sour.
The fruits are well washed, peeled, removing seeds and roots, chopped to a puree consistency. Mashed potatoes in enameled dishes must be kept in a warm place for several days, stirring every 5 hours. After that, squeeze the juice and pour it into a glass container. The same amount of water is added to the juice and left for five days for fermentation. Then the cider is filtered.
A gauze is made from gauze, into which coriander and elderberry are placed, the bundle is lowered into a drink. Thus cider insist another 1 month. After the fermentation ends, the drink is filtered and bottled.
Pear cider can be used for cocktails or other delicious drinks.
English hot pear cider
To prepare such a drink, you need to take a liter of pear cider, one orange, about 20 g of butter, two buds of cloves, cinnamon, sugar or honey.
Remove the zest from an orange, having previously doused it with boiling water. The zest is placed in a pan, cider, sugar, cinnamon and cloves are added there. The mixture is brought to a boil over low heat. Then filter, add oil, orange juice. Serve warm.
Mango and Pear Cider Cocktail
To make a cocktail, you need 330 ml of pear cider and freshly squeezed mango juice, 1 pc. lime and 1 pc. mango.
Cooking
Mashed potatoes are made from one quarter of the mango, the second quarter is cut into large straws. Lime cut into thin slices.
Mango puree is poured into the chilled jug, lime and some ice are added. Then add cider and juice, mix everything.
Pear cider at home is prepared for a long time. But in the end, you will get a tasty drink that can be used both independently and as a basis for cocktails. Such a drink is always appropriate on the festive table.
