All the advantages and disadvantages of induction cookers, as well as a pan for an induction cooker

At the end of the last century, the first cooking surfaces with induction hobs appeared.

At first they were very expensive, because of this, ordinary buyers did not dare to innovate. But it was appreciated by the cooks of restaurants for which the high price was not an obstacle. Over time, the technology has improved, and the prices of such hobs have become acceptable. An induction cooker works as follows: an inductor located in place of a heating element induces eddy electromagnetic currents in the bottom of a pan or pans. These currents warm the bottom of the dishes, and the food prepared in it also warms up. In this case, the glass-ceramic surface does not heat up, since the electromagnetic field freely passes through it.

Now there are a lot of Chinese-made induction cookers on the Russian market. Often, their developers are Russian young companies such as KITFORT. KITFORT induction cookers made in China made of KT -101, KT-102 grades are made in accordance with the directions of modern design in push-button and touch versions and have prices of 2,300 and 2,650 rubles. Their counterparts from the Great Rivers company, also of Chinese manufacture, brands Cara-1, Cara-2, having a glass-ceramic surface, are cheaper - 1200 rubles. More expensive - one-burner induction cookers INDOKOR IN3500 and INDOKOR IN3100 of South Korean production, using components from Germany, cost from 6999 rubles.

Advantages and disadvantages of the stove

The power of the induction burner can be smoothly changed. At maximum power, water boils faster than on gas. The set temperature is maintained accurate to a degree, and the temperature changes instantly. Advantages are the absence of an open flame and hot burners, as well as efficiency. They consume much less electricity than electric stoves with another type of heating element. However, they also have certain disadvantages. Such hobs cannot be installed over any devices that have metal surfaces (i.e. ovens, refrigerators, washing machines, etc.). Very often, people ask themselves whether an induction cooker does harm to human health by its radiation. Firstly, this is not microwave radiation, the harm of which everyone knows. Secondly, the power of the electromagnetic field generated by the burner is negligible, and 30 cm from the stove, the electromagnetic field becomes zero. A much greater effect is exerted on a person, for example, by an electromagnetic field created by high-voltage power lines.

Cookware for induction cooker

To cook on this tile, you need special dishes, the bottom of which must be made of a ferromagnetic alloy. Many companies produce various utensils for such stoves, including pans. Among them are literally unique specimens. For example, a pan for an induction cooker from the Swiss company BULK Plett pan Swiss Diamond for pancakes and eggs Bulk Plett Pan 6-326-I, 26 cm, which received a gold medal at the international exhibition in Geneva, has real diamonds in its non-stick coating. Diamonds have a thermal conductivity of 4 times higher than that of copper, which makes ideal conditions for the distribution of heat through the body of the pan. There is such a frying pan in Russia in different stores from 4900 to 6390 rubles. A pan for an induction cooker with a ceramic coating manufactured by TVS from Italy is made of aluminum, but a special steel plate with magnetic properties is mounted in the bottom, which allows it to be used for cooking on such a stove. Such a pan costs 1,600 rubles. Externally, a pan for an induction cooker is no different from any other ordinary pan. It can be washed with the same detergents as ordinary dishes, you can also use a dishwasher. In general, a pan for an induction cooker does not differ from ordinary cookware when caring for it.
