Geography and climate
Bakhchisaray Wine and Cognac Factory is located in the heart of the peninsula. A bit of history
The first mention of wine in this region dates back to the Middle Ages. According to archaeologists in all ancient cities, monasteries and settlements there were scratches. These are special presses for grapes. Moreover, the juice from the berries then squeezed legs.
In the IV-VI centuries, up to sixty thousand liters of wine could go out from just one estate. To store the drink used huge ceramic containers - Pifos. And sometimes it was necessary to cut down special cellars in the rocks. Their inner surface was supposed to be perfectly smooth, and the lid was made of stone.
Crimean wines entered the European market through Genoese merchants. And it should be noted that trade was quite active.
Winemaking in this region continued to exist even under the Crimean khans. After all, any ruler loves gold, and considerable taxes were paid on the sale of wine. But since 1778, the industry gradually began to decline and resumed only after Crimea joined the Russian Empire.
The production of dry ordinary and fortified wines was established in Bakhchisarai. High-yielding varieties such as Rkatsiteli, Riesling, Aligote, Bastardo and Cabernet Sauvignon were used here. These varieties were not typical for the peninsula.
Plant foundation
In Bakhchisarai there was a secondary winemaking factory. Here they just finished the finished product and bottled it. On the basis of this enterprise, the Bakhchisaray wine and cognac factory was opened in 1963. By this time, a base had already been prepared for the production of our own products. In particular, vineyards with varieties are planted, from which it is possible to produce both weak and fortified drinks.
But even so, full production was established only by 1974. That is, now they grow their own grapes, then they produced wine and immediately they bottled it. The wines of Bakhchisaray soon gained widespread recognition far beyond the peninsula, and the high qualifications and rich experience of specialists working at the plant played a huge role in this.
