To do this, a piece of pork (it is better to take with a thin layer of fat under the skin) is washed, cleaned and dried if necessary with a paper towel. On the upper part of the shank, small oblique cuts are made into which several pieces of clove are inserted. Below, deeper cuts are made (so that they get the "fleshy" part), peeled garlic cloves are inserted into them. The whole piece is rubbed with a mixture of salt and pepper, poured with mustard mixed with soy sauce, left in the refrigerator for the night. The next morning, the cooking of the shank continues. It is sprinkled on top with chopped greens, wrapped in foil and put on a baking sheet in an oven, heated to a minimum of 1.5-2 hours. After this time, the foil is removed from the dish, the temperature rises to 220 degrees, the shank is left to brown. It can be served both cold and immediately from the oven, as an appetizer or a separate dish (in the latter case, it is better to use a side dish).
