Almost half of all milk produced in Ireland is used to make Baileys. And I don’t want to think about how much the famous Irish whiskey is used. Almost 50% of the country's export of alcoholic beverages is accounted for by this popular cream liqueur. We will cook Baileys at home.
A brief history of the drink
The world's first cream liqueur appeared in 1974 in the suburbs of Dublin - the capital of Ireland. Its creation was preceded by hard work and simple accident. Back in 1970, a certain David Dand - the manager of Gildeys of Ireland - decided to create a unique alcoholic drink. It should be natural, tasty, not very strong and soft enough. David Dand drew attention to Irish products that have long been known around the world. This is a natural cream and Irish whiskey. But just mixing the two ingredients was not enough. It took four years to find the right technology.
The right decision came to David by accident. To get a magical taste, he added sugar, caramel, vanilla and chocolate, and after that he registered a company that soon introduced Bailey not only to Ireland, but to the whole world. The liquor immediately gained popularity and to this day remains one of the main products of alcoholic export of Ireland.
Cooking Baileys at home
The technology of preparation of the drink is patented and is kept in the strictest confidence. Delicious results are guaranteed by strict quality control, a unique recipe, the use of modern equipment and natural ingredients. Only fresh cream, the best Irish whiskey, pure alcohol and natural aromatic additives are used. In the manufacture of preservatives are not used, but it is this liquor that has the longest shelf life of all cream - 18 months.
Homemade liquor will turn out not so dense, but it will hardly differ in taste from the original drink. By the way, Baileys at home (recipes with photos are presented below) cannot be stored for a long time. This is only a plus, since it will lack preservatives, stabilizers and other chemical components that are added at the factory.
There are many recipes for Bailey's with milk: at home it can be prepared with condensed milk, cream, coffee, yogurt, and the Miracle milkshake. As the alcohol base, you can use high-quality vodka, Irish whiskey (for example, the same Jamerson), brandy brandy and even alcohol diluted with water. But in no case should you take home-brew as the basis - these products do not combine at all.

Easiest recipe
How to cook Baileys at home? This recipe does not require much effort and time, so it is the most popular. You will need these ingredients:
- half a liter of vodka or Irish whiskey for the base;
- can of condensed milk;
- 400 ml cream with 10% fat;
- 1 tbsp. l instant coffee;
- 2 tbsp. l vanilla sugar (not to be confused with vanilla);
- 4 yolks of chicken eggs.
In a deep bowl, beat the yolks, then add condensed milk and sugar. All this should be mixed well with a mixer. It should be a mass without lumps, homogeneous. You can do this in a blender. Add coffee to the mixture and beat well again. Granules may not dissolve immediately, but there is nothing to worry about, everything will work out after adding the alcohol base. Now add the cream and mix well. Next is the turn of alcohol.
The drink needs to “rest” in the refrigerator for three to five days, after which it can be consumed both independently and as part of cocktails. The density, however, is not at all the same as that of the original Bailey's, so you need to be careful with cocktails. Keep the drink in the refrigerator, just at least three months.
Milkshake liquor
Baileys is often made at home with the Miracle milkshake, which is sold in supermarkets or similar chocolate milk. Milkshake gives the alcoholic drink a sweet and pleasant aftertaste. It will be required for preparation according to the recipe "Baileyza" at home:
- “Miracle” (milkshake) - one liter;
- condensed milk - 2 cans;
- vanilla sugar - a little to taste;
- alcohol base (vodka is suitable) - 350 ml.
Cocktail, vodka, condensed milk and sugar must be mixed to a homogeneous consistency in a blender or using a mixer. In order for the taste and aroma to be balanced, you need to let the Bailey stand in a dark and cool place for a day.
Baileys from tincture
Home-made Bailey's cocktail will be much tastier and practically indistinguishable from the original, if you use a more complex recipe. The process of preparing a drink consists of two parts: preparing a whiskey-like tincture and mixing the ingredients.
Whiskey tincture
For the manufacture of home-made tincture “under whiskey” (the output will be 400-420 ml), you will need these products:
- 400-420 ml of 60% alcohol;
- a third of a teaspoon of ginger (chop);
- six grams of vanillin;
- two teaspoons of honey;
- teaspoon oak codes;
- some cinnamon;
- sugar (for caramel).
Three to four tablespoons of sugar should be caramelized and poured into a jar of an appropriate volume. A pinch of cinnamon, vanilla sugar, honey, a spoonful of oak bark should be added there (it is advisable to rinse and soak it before use). All ingredients must be filled with alcohol. If you manage to use whiskey, it is better to pour in half with spirit so that the total volume is the same 400-420 ml. After 5-6 days, the tincture will be ready. It needs to be filtered, after which you can proceed to the next step.
The "sweet part" of the drink
To prepare the sweet part of the delicious “Bailey's” at home you will need:
- one liter of cream (10%);
- 340-400 condensed milk (not thick and not digested);
- two yolks (it is better if they are orange, homemade);
- two teaspoons of coffee, previously diluted in half a tablespoon of clean water.
In a roomy bowl, you need to beat half a liter of cream and yolk to a homogeneous mass. Then, adding condensed milk and coffee, beat again. It remains to add the remaining cream and beat again. After adding the tincture, the mixture needs to be beaten again. Then add vanilla sugar to the finished drink and leave the mixture in the refrigerator for three to five days. During this period, excess fat will surface. It must be carefully assembled.
Ready Baileys at home should be well filtered through a cotton cloth and bottled. After filtration, the mass should remain without lumps and clotted cream. This liquor can be drunk as is or with ice cubes. Before use, it is recommended to filter it again - so less fat will settle on the glasses.
The finished drink will turn out to be about 12% strong, while in the original - 17%. However, “Bailey's” on the homemade tincture “feels” much stronger than it actually is, so it is unlikely that anyone unhappy with the insufficient strength of such a delicious drink can be found.
Nut and Cream Liqueur
Baileys can be cooked with nuts at home. We need a standard list of ingredients (condensed milk, cream, alcohol base, instant coffee, yolks, vanilla sugar), to which should be added 25-50 grams of grated hazelnuts. They must first be fried.
The alcohol base for two weeks should be insisted on hazelnuts in a dry and dark place. Then filter the mixture through cheesecloth. Further, the recipe is no different from the classic, the simplest. You just need to mix all the ingredients into a homogeneous mass and let the drink brew.
Peppermint Baileys at home
Peppermint-chocolate "Baileys" has an unusual taste. To prepare it you will need:
- vodka - 0.5 l;
- cream (30%) - 350 ml;
- condensed milk - 1 can;
- chocolate (you need black);
- vanillin - 1 sachet;
- granulated sugar - 3 tbsp. l .;
- mint - 1 bunch.
You can still cook at home "Bailey's" with a recipe with milk. If you want to try this option, then you need to replace the cream with fat milk, but the drink will turn out not to be thick.
In this recipe, attention should be paid to the preparation of the mint component. It’s good if there is a mint flavored liquor - this greatly simplifies the task. But fresh mint needs to be filled with water (quite a bit), add 2 tbsp. l sugar and bring to a boil. After half an hour, remove the tincture from the heat and leave to infuse for a day. Then pour vodka into the syrup, mix all the ingredients and do not touch another day. It remains only to filter the alcohol from the mint.
Cream should be whipped, add condensed milk, melted chocolate, vanilla sugar. Then add vodka with peppermint syrup or peppermint liquor and whisk again for five to seven minutes. The finished drink must be sent to the refrigerator to brew.
Combination with other products
Liquor can be added to desserts, fruit salads and to the liver. The Bailey’s taste does not harmonize only with citrus and tonic, but this statement is debatable, because there are no comrades for the taste and color. Decorate the drink when serving with slices of banana, strawberries, chocolate chips, often served with cold coffee. Sometimes Baileys is diluted with cream, a milkshake with chocolate, coffee or just milk. It is very tasty to use it as an ice cream tonic. The creamy taste of "Bailey's" will give a feeling of comfort, and the strength of the alcohol base will turn your head.
