For about a month, the contents in a glass container are put in a secluded place. At the end of the period, the resulting drink can be poured into sterile jars. If necessary, at this stage, you can add a little sugar to the fermented mass. After that, prune wine must be put again in a secluded place for a period of 30 days. After the allotted time, you can consume an alcoholic drink.
Prune Wine Raisin Recipe
As a result, the strength of this wine is 12 degrees. For those who want to increase the degree of a liquor, if desired, a small amount of vodka or alcohol can be added to the bottle.
For cooking, you will need ingredients such as:
- prunes - 1 kg;
- granulated sugar - 1 kg;
- water - 5 l;
- raisins - 100 g.
You need to start creating an alcoholic drink with sourdough. In this recipe, the leaven will be insisted on raisins. To do this, you need to put unwashed raisins in a jar, after which pour 1 tablespoon of granulated sugar inside and pour a glass of water. Stir the contents and cover with gauze. Then for about 4 days the sourdough is left in a secluded place. When the contents are ready for the next step, a characteristic odor will appear and foam will form on the surface.
The next step will be the preparation of prunes. It needs to be washed well and to get all the bones from the inside. After that, dried fruits should be poured with 4 liters of boiling water and left under the lid for an hour.

Then the obtained slurry from prunes should be mixed with infusion. Add to it 1 liter of water and 0.5 kg of granulated sugar. Also, inside the contents, pour the resulting sourdough on raisins. Already after 1 day, characteristic signs will appear, by which it will be possible to determine that the fermentation process is ongoing. This is the presence of a characteristic acidic smell and hissing foam on the surface. In order that the prepared alcoholic beverage does not soured, it must be stirred 3 times a day.
After 5 days, the wine can be filtered, squeezing everything from the pulp to the last drop. Then you need to add 0.25 kg of granulated sugar to the drink, mix and pour everything into a container for further fermentation. The basic rule that must be taken into account during this procedure is that the bottle does not need to be completely filled, but a little space is left for the formation of foam. On the neck you need to put on a glove (previously punctured in one place) and put the container in such a secluded place where the temperature will not exceed 25 ° C.
After another 5 days have passed, another 0.25 kg of granulated sugar must be added to the fermentation product and the contents mixed. In time, the whole process takes about 45 days.
How to determine that a young wine is ready?
The alcoholic beverage is ready to drink if its color has become lighter, the glove is no longer inflated, and a small precipitate has appeared at the bottom of the bottle. Once the fermentation process has come to an end, the resulting young wine must be drained without sediment into another container for ripening. Now it needs to be added to the edges of the bottle (so that there is no space for air), without fear of a place for the formation of foam. And be sure to close.
Young wine should fully ripen at a temperature of 15 ° C for 3-4 months. If you leave the drink for a longer time, its taste will become more saturated.
