An important component in the Armenian recipe is not only dough, but also properly cooked chicken meat, and golden broth.
Manti boats (traditional Armenian dish)
In the original of this recipe, the dough should be cut into squares with sides of 3 cm, but for some this size may seem too small (irritates the nervous system during cooking), so you can make a slightly larger square (sides of 5 cm)
The chicken filling specially prepared for the dish should be juicy, but if it was in the refrigerator or white meat was used, add some broth to the minced meat.
What you need for the test:
- 300 milliliters of water;
- 1 tablespoon of oil;
- 1 tablespoon (15 g) of salt;
- 2 medium sized eggs;
- 500 grams of flour (so much for a tough dough);
- + 100 grams of flour for kneading and rolling.
For filling:
- 300 grams of boiled chicken, finely chopped;
- 6 tablespoons of chicken stock (see recommendations above);
- ¼ teaspoon of pepper;
- ½ teaspoon of salt or quantity to taste.
For baking and cooking:
- 1/3 cup of a mixture of vegetable and olive oil;
- 1,500 ml of homemade chicken broth.
Garlic yogurt
To serve:
- 240 grams of yogurt;
- 60 grams of water;
- 10-15 grams (2-3 medium cloves) of garlic, grated;
- ½ teaspoon of salt;
- a pinch of white pepper.
Cooking method
Flour (500 grams) is mixed with salt. They make a small depression, pour other products into it: eggs, oil and water. Mix the dough, which is transferred to the flour-sprinkled home table for working with the dough, and knead it a little extra until it stops sticking. Mixed dough is formed into a ball, covered with a clean towel and left to rest for 30 minutes.
Preparation of the filling: cut the chicken into slices and season with salt and pepper to taste. In addition to a small amount of broth, a little (1-2 tablespoons) of olive oil can be added to the aroma.
On the table, the dough is rolled out in the form of a sheet with a thickness of about 3 mm.
Then, using a square cookie cutter, cut into squares. Place a filling on each square and the dough is clamped at both ends to make it look more like a boat.
All "boats" are laid next to each other in pallets lubricated with vegetable and olive oil. The remaining mixture of vegetable and olive oil is distributed thinly over the surface. Bake in an oven preheated to 180 ° C. The surface of the "boats" should turn pink, in time it takes about 15 minutes.
Remove from the oven and fill with hot broth. Then return back to the oven, and bake another 35-40 minutes, or until they are cooked, taking part of the broth.
During this time, you can cook your garlic yogurt. All products are mixed in a suitable vessel until smooth. Store in the refrigerator until use.
During the heat treatment, the boats will absorb most of the broth and become very fragile and tasty. Place them in a deep dish with a portion of the broth in which they were cooked. Each serving is poured with two or three tablespoons of garlic yogurt and served immediately.

Before heat treatment, it is only enough to dip their bottom in oil and spread them into the levels of the pressure cooker, while the water should already boil. And after all these manipulations, the preparation lasts 50 minutes.
