Berry-based homemade drinks are the best complement to the dessert. And one of the most delicious is plum liquor. At home, preparing it is quite simple, even if you do not have your own garden or a plot in the country, planted with plum trees. At a time of a generous harvest, the price of these fruits reaches the lowest rates, so probably everyone can buy a bucket of raw materials. And then - add sugar and strong alcohol (not necessarily the most expensive, but of high quality), and we get a delicious plum liquor at home, which, of course, is much tastier and healthier than store fruit drinks. In addition, you are completely confident in its composition, since you made a drink yourself!
Plum liquor at home
Ripe (maybe even slightly overripe) fruits of cultivars are well suited as raw materials. It can be greengage or Hungarian, mirabelle or egg. If you suddenly come across wild ones, then do not be upset, just increase the amount of such an ingredient as sugar by about 40 percent, then we will achieve a good result. What do you need to make plum liquor at home? A simple recipe includes only three ingredients: sugar, plums and vodka. For every 2 kilograms of raw materials (already pitted) you need to take a pound of sugar and half a liter of vodka. Vodka can be replaced with diluted alcohol (up to a fortress of 40-45%), well-purified moonshine or cognac.
Plum liquor at home. Recipe
- The fruits are washed thoroughly in water. We clean from leaves and stalks, seeds and possible rot. The peel does not need to be removed.
- Next, the resulting pulp must be crushed to a state of homogeneous gruel. You can do this using a blender, a meat grinder, a mixer, even a wooden rolling pin - anyway, the main thing is the result.
- Paste gruel in a clean three-liter jar and add sugar. Mix thoroughly.
- We lock the jar with a lid and set it for three days in heat in a sunny place, so that the mass starts up juices.
- After add alcohol and mix. Lock with a lid and set aside in cool (10-15 degrees) to insist. The process lasts about a month and a half.
- Then the drink must be filtered through gauze and cotton wool, filtered to transparency.
- At the exit from this number of ingredients, we get plum liquor at home - up to one and a half liters. Pour into bottles and close with cork caps. Can be stored in the basement or in the refrigerator below - up to two years. The drink has a pronounced plum flavor and delicate aroma, color from yellowish to amber brown, depending on the varieties of the selected fruit.
Gin Plum Brandy
One option for making plum liquor at home is to replace vodka with gin or rum. What is typical for this recipe: liquor is prepared in the microwave by the express method, so to speak.
We will need: 1 kilogram of fresh and ripe plums, a pound of sugar, a bottle of rum, real, pirated (you can use gin).
Cooking
- We wash the plums and release from the seeds and stalks.
- We put them in a blender with sugar and turn into a homogeneous slurry.
- In a glass bowl, mix the fruits with gin and put in the microwave at medium power (for 10 minutes). Then we make the power minimal and languish for another thirty minutes, stirring occasionally.
- Remove the container from the microwave and allow to cool. Filter and filter. You can pour it into bottles and let it brew, but you can immediately use it. So you can get a βquickβ plum liquor at home. The recipe is good for those parties when expensive guests are on their way, and you want to treat them to something delicious along with a dessert that has already been prepared.
"Japanese" home-made liquor liqueur
The Japanese are famous lovers of plum alcohol. Now in many supermarkets, quite capacious cans with unreadable hieroglyphs, filled with halves of plums in an amber, brownish, greenish liquid, began to appear. These are the so-called Japanese "wines", and in fact - low-alcohol liquors or tinctures on the fruits. They are quite expensive, especially at the present time. But such an exquisite and original drink is quite capable of being prepared with your own hands in the kitchen.
We need: several cans with lids that lock on the lock (capacity - 1 liter), 3 kilograms of ripe plums of cultivated varieties, 1.5 kilograms of sugar, one and a half liters of vodka, half a liter of cognac (the aging time of a grape drink does not really matter: you can take and a three year old, most importantly, to quality and not fake).
Cooking
- Plums are thoroughly washed and sorted out, taking out the bone and tearing the stalk. We break the fruits clearly in half. If they are too hard (which is not recommended), you can lightly cut on the fault to let the juice run.
- Two-thirds of each prepared cans are filled with halves of plums.
- We make a thick sugar syrup from a small amount of water and the entire amount of sugar indicated in the recipe.
- Add vodka and cognac to the syrup and mix thoroughly until smooth. Some people prefer to throw a few buds of cloves, cinnamon, ginger, and lemon zest into the fill. But you can completely do without these procedures, since spices only interrupt the delicate aroma of plum.
- Pour the mixture with half the fruit in the jars, let cool and cork. The liqueur will be infused for several months, however, in coolness and darkness. Then you can use it.
