For gourmets, peach wine is a real treat. It is made according to classical technology, but is not kept in oak barrels that change the taste of the drink. Fermentation takes place in glass containers. This allows you to maintain the taste and rich aroma of fresh peaches.
Properly prepared peach wine has a transparent color with subtle yellow-green or pale orange reflections. The taste of wine is very delicate, in the bouquet there are not only fruity notes, but also a tart shade of almonds. To appreciate the real taste of peach wine, it is tasted in its purest form without the addition of juices or alcoholic beverages. Before tasting, peach wine is cooled.
Preparing fruits for wine
In order to cook peach wine yourself, you do not need to have expensive equipment. The only condition is that the winemaker must comply with the production technology. Only ripe fruits are suitable for making wine. Overripe peaches are not recommended because fermentation has already begun. In the process of preparation, the vinegar taste intensifies, and instead of a delicious wine, vinegar is obtained.
To get a delicious peach wine, you must use freshly picked fruits or those that have been stored for no more than two days in a cold place. Collected peaches are washed in running water to wash away dirt and dust, and then cleaned of seeds and twigs. After that, they are subjected to further processing to obtain wine.
How to make classic peach wine
Each winemaker has his own secrets of making a drink, so the wine has a variety of tastes. Recipes differ in the amount of sugar, water and a set of spices used in fermentation. When a winemaker makes large quantities of peach wine at home, the recipe classic is chosen. To do this, you need:
- peaches - 10 kg;
- water - 6 liters;
- sugar - 4 kg;
- citric acid - 50 g.
The presence of citric acid preserves the taste and aroma of peach, stabilizes the level of acidity in the wine.
Prepared peaches are ground to a state of homogeneous slurry, pour it with water, add half the sugar and citric acid. Pour the mass into a bottle for wine. On top of the neck cover with a piece of gauze so that no debris enters the mixture. For fermentation, the container is placed in a warm place for 2-3 days, periodically shake it. After this, the pulp is filtered through canvas or cheesecloth to separate the juice, again it is poured into a wine bottle and put on a water lock. After 5 days, a little juice is collected from the container, sugar is dissolved in it and poured back. The procedure is performed several times.
Fermentation lasts for 2 months. Then fermented wine from peaches is removed from the precipitate using a thin hose, poured into another container and placed for six months in a cold place, so that it ripens. During this period, filtering is carried out several times, after which the drink is bottled. Store in a cold place for no more than 3 years.
Peach wine with alcohol
To get a strong wine drink, honey is added to the recipe to taste. The fermentation process lasts from 2 to 3 weeks, when it is finished, the pulp is filtered and poured into juice to give a fortress of 2 liters of alcohol, nutmeg, cinnamon or vanilla are added to taste, left in a dark place for 3 weeks. Fermented juice is again removed from the precipitate, poured into prepared bottles and kept in a cold place for 2 months. If a precipitate appears, the drink is filtered until it becomes transparent. After 2 months, peach wine can be served.
