Perhaps they can be called one of the oldest recipes for non-yeast cake. And the usual name for us โ€œbiscuitโ€ appeared in the 16-17th centuries in Europe. And we must pay tribute to the cooks of that time, since preparing a biscuit even today, when most of the work is done by the kitchen equipment, is not so simple for many. A real classic recipe does not mean the use of any dough improvers, and all its softness, airiness and tenderness of taste are achieved only at the expense of the skilled hands of the master chef.

But since making a biscuit is practically an art that requires great care and some skills from the chef, many are sure that this cake is not for home cooking. All ingredients must be mixed very carefully, carefully observing the technology, and the dough should be beaten for a long time, in order to end up with exactly the same classic โ€œairโ€ biscuit. But do not think that it is so difficult and only professionals can do it, because hostesses come to the aid of modern kitchen appliances and various baking additives, which significantly simplify the complex cooking process, without reducing the quality and taste of the product.

Most hostesses bake a biscuit most often only as an intermediate stage for a more complex culinary masterpiece - a cake, but it is wrong to forget about it as an independent dessert. After all, what could be tastier than fresh soft tea biscuit? And if you still soak it with sweet syrup or jam? Real jam!

In the original classic recipe, there were only three ingredients - eggs, flour and sugar (sometimes vanilla to taste). But since they prefer to cook biscuit in every country, and whatโ€™s in every kitchen, theyโ€™ll create many different variations from the original recipe - chocolate, berry, cream, sour cream and many, many others. Choose any - and boldly proceed!

How to cook a classic biscuit recipe?

He will need: 5 eggs, a glass of sugar (the smallest that you can find) and a glass of flour, plus a bag of vanillin to taste.

First things first, you need to very carefully separate the egg white from the yolks. The food container should be clean, also make sure that no particles of yolk get into the bowl with the proteins - this can greatly complicate the subsequent process of raising them. We begin to whip the proteins separated in this way with a mixer at a low speed, slowly pouring sugar with teaspoons. To make the foam more stable, you can add a few drops of lemon juice to it. When the mass increases markedly and becomes dense, we also slowly and slowly begin to add egg yolks. You cannot rush in this process, you can easily spoil the result. When the mixture is well beaten, remove the mixer and add the flour, slowly sifting it into the dough and stirring with a spoon in the direction from the bottom up. Pour the finished mixture into a baking dish and put in a preheated oven (190-200 ยฐ C). Bake for 20-25 minutes, by no means opening the door before the 20th minute, as a delicate sponge cake may fall. Let the finished cake cool for another 15-20 minutes right in the form, and then gently turn it over to the dish. Cutting the biscuit into pieces is possible only after it has completely cooled.

How to cook a biscuit in a simpler and easier way?

It will require: 3 eggs, 120 grams of flour (3/4 cup), 150 grams of fine sugar (ยพ cup), a teaspoon of baking soda plus a bite to repay it, or one bag of baking powder (baking powder).

Break eggs in a separate container, add sugar there. Beat the resulting mixture with a whisk (or mixer at low speed). When the dough visually doubles and brightens, begin to add a little sifted flour. When the mass becomes completely homogeneous, add the baking soda or baking powder that is quenched in a separate bowl to it. Grease the bottom of the baking dish with butter and add a little flour, then pour the finished dough into it. The oven must be preheated in advance to 180 ยฐ C, put a baking tray with a cake in it and bake for 25-30 minutes. Opening the door during baking a biscuit is possible only after 20 minutes, if done earlier, the cake may fall.
