Production Features
Wine "Old Tbilisi" is prepared only from grape varieties that are called autochthonous, that is, exclusive. These include Dzelshavi, Saperavi, Rkatsiteli and Mtsvane. On their basis both single varietal and blend wines are produced.
Berries are picked only by the most ripe and juicy. The plant has the latest equipment, so the grapes fall under a gentle press. The fermentation process takes place in steel tanks and lasts from seven to fourteen days. After the Old Tbilisi wines are ready, some are bottled, and some are sent for aging in oak barrels. This procedure gives the wine astringency and tannin.
