Plum tincture on vodka is called rakiya. Typically, the strength of this drink is equal to the strength of vodka, but at home sometimes it turns out more. The female half of the population prefers a weak plum liquor, which is more like liquor or wine. But this is a personal matter for everyone, to his own taste. There are several recipes for how to make such a drink.
Pitted
From the name it is clear that in order to get tincture of plum on vodka in this way, you do not have to take out the seeds from the berries. The volume of the finished product will depend on how many ingredients you took. Keep in mind that the process takes a long time - about six months (+/- a couple of months). So, tincture of plum on vodka requires:
- ripe and whole berries (so that is enough for a full three-liter jar);
- vodka (based on the fact that it will fill the berries to the brim);
- sugar (to taste).
Wash and dry the berries. Put in a jar so that they lie freely, not strongly pressing against each other, right up to the neck. Pour vodka to the brim. Cover everything and put in a warm place for one and a half to two months. Every day the color will be brighter. As a result, the plum vodka will become saturated red.
After time, remove the berries from the jar (do not drain the liquid), fill them with sugar and carefully shake the container. Within two weeks, the berries will produce juice, which, when mixed with sugar, will give a unique sweet and aromatic syrup. Then just pour the plums into a colander, first putting down the pan where the sweet juice will merge. It is viscous, you can leave it overnight so that all the syrup is guaranteed to drip drop by drop. Mix together both parts of the tincture: sweet juice and infused vodka. Close everything in the bank, put it in a warm place and insist for another couple of months. Plum on vodka has a unique aroma. Do not be alarmed if the alcohol meter does not show degrees. The main composition of the liquor is fructose and sucrose from plums, and not the vodka that was added.
Seedless
Seedless plum tincture of vodka is prepared similarly to the first method. But there is another option:
- pour seedless berries into a jar and pour vodka;
- insist a few days;
- then introduce sugar and insist on the glove for a couple of weeks;
- extract alcoholized berries;
- dry them in the oven for several hours at a temperature of 120-230 degrees;
- cork the tincture and put it in a dark place - go;
- put the berries in a box, laying each layer with parchment paper.
So you get two products at once: tincture of plum on vodka and sweet-dried berry for snacks or additives in desserts. That is, all the ingredients pay for themselves. To make the tincture not too strong, sugar can not be added to it, but diluted with sugar syrup without an alcohol component. The longer the drink is infused, the richer the aroma and taste. It can be stored for three to four years without compromising the quality of the tincture! The recipe using seeds has its own distinctive feature - the drink acquires their aftertaste, which perfectly sets off the taste of the liquor.
