Legumes have long been used in cooking in almost all countries. However, if beans, soy, lentils or peas are known to all, and there are innumerable dishes with them, then some members of the family - for example, rank or mash - have received much less distribution. At the same time, in the eastern countries the latter is very popular and is present in many dishes. The Russians also began to have an increased interest in him.
What is attractive about mash
It has other names: "golden beans", or "mung beans." In biological terms, mung bean is very similar to ordinary beans, but it has very valuable differences. First of all, it does not cause increased gas formation, swelling of the abdomen - it does not swell from it, like from many other beans. The second advantage: mung beans are not poisonous in their raw form, like some types of beans, so they can be eaten without prior processing. Of course, they are not competitors to beloved peas, you canβt bite them with whole grains, but the golden bean seedlings are both tasty and healthy. They contain up to 40 percent protein, which is very valuable for vegetarians and ayurveda nutritionists. They contain a lot of amino acids, fats, vitamins and carbohydrates of delayed absorption, which successfully provide the body with the βrightβ glucose that improves brain function. All these facts are very attractive, since it is very easy to germinate mung bean at home.
Easy process
For it to be successful, beans should be taken only whole and healthy. Discard wrinkled, cracked or deformed ones before germinating the mash. The easiest option is to take a flat bowl like an ice cream tray. Beans are poured into it and poured with warm (approximately 20-25 degrees) water - settled, boiled or filtered. It should cover the whole grain. Some people who know how to sprout mash say they can do this in a regular bottle. Although other experts believe that the use of non-flat containers can lead to decay or mold.
The dishes are loosely covered and placed in heat. If the walls are transparent, cover the entire structure with a cloth. Light slows down and impairs germination. Two or three times a day, the mash should be washed under a gentle stream of running water through a colander or sieve and fill it with new liquid. Gradually the beans will burst. They are gently rubbed with their hands to separate them from the peel, immersed in water and the floating shells are removed. Germ it is necessary to germinate until sprouts are extended by three centimeters. The contents of the container are last sorted, if there are shells left, they are eliminated, and the finished product is thoroughly and carefully washed. After the water drains, you can seedlings or eat just like that, or cook some dish with them.
Useful enhancements
There are ways to germinate mash more efficiently and reliably. True, to facilitate the process, two containers are already needed. One should be much larger than the other. The larger one meets the previous requirements; the smaller one is made of plastic containers. A significant part of it is cut off from above, in fact, only the bottom remains, in which holes are made with an awl to drain excess water and which is covered with gauze. If there is a low sieve with small cells, you can use it. The main thing is that the inner vessel does not touch the bottom with the outer one, since you need to germinate the mash without the risk of mold - it will then be impossible to get rid of its smell. What is the advantage of this method - you do not need to rinse and grind the beans. Just water like houseplants. It would be nice - every three hours. And drain excess water from the outside of the βcontainerβ. This is not difficult, since it is enough to simply remove the internal component and pour everything from the external.

Korean use
Of course, mung bean is eaten as raw as sprouted wheat. However, if you wish, you can make a salad beloved by Koreans. Golden bean seedlings will have to be boiled and pour in a sauce, which will go to 4 large tablespoons of olive oil and lemon juice, 2 - sesame oil, one each - soy sauce and cilantro seeds, half a minute - black pepper and salt. Everything is mixed, poured into seedlings and crushed by cargo for half a day. Tasty and unusual!
