Fresh unfrozen mussels are stored all day, so you should know in advance how to cook mussels and choose the right recipe. Before cooking, live mussels are washed in water and all opened shells must be discarded - they are not suitable for food. If after cooking you still have unopened sinks - you can’t eat them either.

How to steam mussels?

Pour water into a large pot and bring it to a boil. Add the juice of one lemon and two hundred milliliters of white wine to the water.   • two hundred and fifty grams of peeled mussels;
  • one tomato;
  • a spoonful of mayonnaise;
  • seasonings and herbs.

Boil rice in salt water, fry finely chopped onions together with grated carrots in oil until golden brown. Then add rice and mussel meat to the vegetables and simmer until tender. At the very end, seasonings and finely chopped greens are added to the pilaf. Chop the tomato finely, mix with mayonnaise, add to the pilaf, cover and let it brew. Serve hot.

Soup with peeled mussels

How to cook mussels without shells? Just like untreated, only the cooking time is halved. That is, if we cook unpeeled mollusks for up to five minutes, then two will be cleaned. For soup, we need:

  • boiled peeled mussels and broth;
  • green onions;
  • garlic;
  • a spoonful of chili;
  • a spoon of turmeric;
  • zest of two oranges;
  • three tomatoes;
  • cilantro.

Bring the broth with mussels to a boil and add finely chopped onions, garlic, seasonings and shredded tomatoes. Cook for a few minutes. Add cilantro at the end. Serve in soup bowls, previously sprinkled with olive oil.
