For our countries, seedless watermelon is still a rarity. In the markets, in shops and supermarkets, more common ones are still more common. But if you are lucky enough to find these seedless berries inside, then be prepared that they will be significantly more expensive. It is because of the low prevalence of this melon variety that many people are afraid of them, considering it genetically modified, others are sure that they will turn out to be tasteless.
But in fact, a seedless watermelon was the result of selection. Do not confuse it with a change in genetic material. In the process of selection, agronomists cross different varieties among themselves, select the best specimens and continue experiments with them until they obtain the desired result. So, these seedless berries were bred in California about 20 years ago. But in fairness it is worth noting that seeds are still found in them, but they are much smaller, they are underdeveloped and quite edible.

A seedless watermelon, of course, is slightly different from its immediate family in color, size and taste. They are more watery and loose in structure, but all the flesh of this berry is sweet. And if you do not like watermelons just because you need to constantly choose the seeds, then this variety will be a find for you. If a few years ago, a berry without seeds could be distinguished only in appearance, but now it is more difficult to do. So, before they were the fruits of light green light, without pronounced stripes. Now, breeders have bred both miniature versions with bright red flesh and striped dark specimens. On sale you can even find pitted yellow watermelon .
Sugar Baby, for example, is particularly popular in Western countries. These are medium-sized watermelons weighing about 5-7 kg with dense and juicy pulp. Their main difference is the almost perfect round shape and dark green skin color. But miniature varieties are no less popular - they are preferred by small families or single people.
They buy the best grades of pitted watermelons and restaurants. Not only Sugar Baby is popular, but also Golden Midget, and Early Moonbeam. They make popular desserts, ice for drinks, freshly squeezed juices (sometimes they are mixed in a 1: 1 ratio with
sparkling water). They also serve as an excellent addition to feta cheese and feta, olives, tomatoes and even smoked ham. By the end of July, you can even find watermelon gazpacho on the menu of some restaurants. It consists of seemingly incompatible products. This sweet berry is mixed with a blender with tomatoes, cucumber, mint, green onions, basil are added to the resulting liquid, all this is salted, pepper and infused overnight in the refrigerator.
But even at home, they try to cook seedless watermelon. It is not only salted in barrels, but also used to make honey and even moonshine. Thrifty housewives even make jam from its peels. But the most popular dish for a long time will be just a watermelon cut into large chunks - it is placed in the center of the table so that at any moment any member of the family can take a slice for himself. Do not be afraid of seedless varieties. You boldly buy both round and long specimens - and these are also different varieties of this berry, bred by breeders.
