You need to start a fight with him, during which you get an ax on the head. At the same time, Visp will not be able to cope with his part of the task, but for this he will teach you the basics of theft, and you yourself can get the key and diary. However, if you call the guard green-faced, the fight will be more serious, and Visp will be able to steal the key, but at the same time you will not get theft skills.
