To the museum? No, to visit!
There are no exhibits in the Kalach Museum in Kolomna that are behind glass cases that cannot be touched, there are no signs with inscriptions and boring explanations from the guide.
So, an old brick building of the XIX century, in the wall there is a strong iron door, and behind it there is a huge hall with a vaulted ceiling. In the middle of the hall - an incredible size old stove. It was reconstructed according to old drawings, it consists of two hearths - tiers, it was heated only with birch firewood, from which the bark was previously removed. It was firewood that gave Kalach whiteness and aroma of wood. Up to 2 thousand rolls can be baked in such an oven per day.
The host meets the guests - kalachik, the so-called master baking kalachi. He is not a fiction, but a historical figure: in the 19th century in Kolomna, a Posad man named Milyaev prepared and sold Kalach. And kalachnik tells the amateur who came to the light (and museum visitors) what kalach is. And it is very interesting!
According to visitors' reviews, the Kalach Museum in Kolomna has a unique theatrical performance. During which the master, according to an old recipe, bakes a real masterpiece. And an hour later, when the performance ends, guests can taste the refreshments in the heat of the heat.
Secrets of kalach production
The Kalach Museum in Kolomna reveals the past of this dish, once very common in Russia, but now forgotten. Kalach fishing no longer exists in our country. Therefore, those confectionery products that are called “kalach” on the menu are not really such.
After all, the composition of Kalach is simple: water + flour + salt + hops. All. And the secret of unusual taste was a lot of tricks.
One of them is this: Kalach must be prepared by mixing different types of flour and necessarily adding grains, coarse grinding. Previously, such flour was made only in the Volga region.
And one more secret is discovered in the kalach museum: it is required to roll out the dough on a cold iron table - then the dough does not stick and does not dry out, cooling and at the same time forming into the product.
To restore the kalacha recipe, museum staff studied the cookbooks of the 19th century.
How to eat kalach
And this is taught in the museum! After all, it is right to eat kalach - one must also be able to.
This dish is eaten only hot, starting with a crispy crispy “lip” - this is a cut on the dough to give shape. Then they eat the “belly” - this is the most delicious part, soft, filled with melting butter. Well, the dense “pen”, for which they hold kalach while eating, can be eaten, or you can give it to the poor. And so the expression “get to the handle” appeared - to get to the state when you reach other people's fistful “hands”.
And with you?
Of course, about the Kalach Museum in Kolomna, the visitor’s reviews would not be complete if all the guests didn’t advise to unanimously buy the food they liked on the track. As well as bread and other pastries.
